Smoked Salmon Cucumber Bites with Dill Crème Fraîche
A cool, crisp cucumber base keeps the smoked salmon and lightly seasoned dill crème fraîche in a neat one-bite arrangement.

These bites keep their flavors deliberately restrained: the crème fraîche gets a little dill, lemon, and salt, while the smoked salmon remains the main flavor. Dry cucumber and close-to-serving assembly preserve a clean snap under the cool topping.
Start with a dry base
Cucumber releases moisture from its cut faces, so blotting each round helps the cream sit neatly instead of sliding. Thick rounds also give the small toppings enough support to travel from platter to hand.
Keep the cream subtle
Dill and lemon wake up the crème fraîche without competing with the smoked salmon. Keep the mixture thick and spoonable; a loose topping can spread past the cucumber edge and blur the neat one-bite shape.

Fold the salmon loosely
A relaxed curl keeps the smoked salmon soft and gives each bite a little height. Fold the slices rather than rolling them tightly, then settle them gently onto the cream.
Choose one finishing note
Small capers bring a briny pop that suits the salmon. For a sharper, crisp finish, finely minced red onion replaces the capers; using one garnish keeps the bite balanced and uncluttered.

Assemble near serving time
The cucumber stays crisp when the topping is added shortly before the platter goes out. Keep the prepared components chilled separately, then spoon, top, and serve without a long wait.
Smoked Salmon Cucumber Bites with Dill Crème Fraîche
Ingredients
- • 1 large English cucumber
- • 4 oz cold-smoked salmon
- • 1/2 cup crème fraîche
- • 1 tbsp finely chopped fresh dill
- • 1 small lemon, finely zested and juiced
- • 1/8 tsp kosher salt
- •
Method
Wash and dry the cucumber
Rinse the English cucumber and dry it thoroughly with a clean towel, keeping the peel on for color and structure. Trim off both ends so the first and last rounds have flat edges.
Look for: The cucumber surface is dry and the trimmed ends sit flat on the board.
Cut and blot the rounds
Slice the cucumber crosswise into about 16 rounds, each roughly 1/2 inch thick. Lay them cut side up on a towel and blot the moisture from both cut surfaces so the topping stays in place.
Look for: The rounds are sturdy, evenly thick, and no longer glossy with surface water.
Season the crème fraîche
Finely zest and juice the lemon. Stir the crème fraîche with the dill, lemon juice, most of the zest, and kosher salt until smooth; reserve a pinch of zest to finish the bites.
Look for: The crème fraîche is lightly flecked with dill and lemon and remains thick enough to mound.
Fold the salmon into ribbons
Separate the cold-smoked salmon into small portions and gently fold each into a loose curl, keeping the slices soft rather than compressing them into dense rolls. Chill the portions until assembly.
Look for: The salmon portions look airy and fit neatly on a cucumber round.
Spoon on the cream
Arrange the cucumber rounds cut side up on a serving platter. Spoon a small mound of dill crème fraîche onto the center of each round and smooth it lightly with the back of the spoon, leaving a slim cucumber border visible.
Look for: Each round has a neat centered mound that does not run over the edge.
Add salmon and garnish
Set a loose salmon curl on each mound. Finish each bite with a small drained caper; if choosing the red-onion alternative, use a small pinch of finely minced onion in place of the caper, not both.
Look for: The salmon rests securely on the cream and each bite has only its selected garnish.
Finish with lemon zest
Scatter the reserved lemon zest lightly over the platter, concentrating a little on the salmon so its aroma is noticeable without covering the delicate fish flavor.
Look for: A few fine lemon threads brighten the bites without obscuring the salmon.
Serve shortly after assembly
Bring the platter to the table soon after topping the cucumber; the cut rounds stay crispest before the crème fraîche has time to draw out moisture. Keep any unassembled components chilled until needed.
Look for: The cucumber still has a clean snap and the salmon remains cool and supple.
