Smoked Salmon Cucumber Bites with Dill Crème Fraîche

20 min · 8 two-bite appetizer servings

Ingredients

□ 1 large English cucumber

□ 4 oz cold-smoked salmon

□ 1/2 cup crème fraîche

□ 1 tbsp finely chopped fresh dill

□ 1 small lemon, finely zested and juiced

□ 1/8 tsp kosher salt

□

Directions

1. Dry the cucumber, slice into sturdy rounds, then blot both cut faces until no surface water remains.

2. Season crème fraîche with dill and lemon; reserve zest. Fold smoked salmon into loose curls.

3. Spoon a neat mound onto each round, add salmon, then finish with capers or the red-onion alternative.

4. Scatter on reserved zest and serve soon after assembly to keep the cucumber crisp.

Cook’s note: Keep the cucumber rounds dry and assemble shortly before serving.
