Slow-Cooker Jamaican Jerk Chicken
Scallion, thyme, allspice, ginger, lime, and Scotch bonnet coat tender thighs, then a short broil adds browned edges beside coconut rice and crisp cabbage.

This slow-cooker version puts a scallion-rich jerk paste directly on boneless thighs before they cook. The long, gentle heat softens the aromatics into the juices, while a quick broil restores the dark, browned edges associated with jerk.
Build a fragrant jerk paste
Allspice, thyme, ginger, garlic, lime, brown sugar, and scallions create a paste that clings to the thighs as they cook. Scotch bonnet sets the heat: include its seeds for a livelier result, or remove the seeds and pale ribs before mincing for a gentler plate.
Let the thighs turn tender
Boneless thighs stay forgiving through a long, moist cook, and the small amount of broth keeps the paste from scorching against the cooker. Cook until a thermometer confirms the thickest piece is hot through and a fork meets little resistance.

Make rice and peas alongside
Coconut milk gives the rice a mellow, rich base, while red kidney beans and thyme make the familiar rice-and-peas pairing. Letting the covered pot stand after cooking gives the grains time to finish steaming before they are fluffed.
Add browned edges at the end
The slow cooker tenderizes the chicken but cannot brown it, so a brief broil or grill supplies that last bit of char. Stay close: brown sugar colors quickly, and the goal is a few dark edges rather than a dry crust.

Balance the plate
Serve the chicken and reduced cooking juices with coconut rice and peas, then add cold cabbage dressed with lime, vinegar, olive oil, and honey. The crisp, tangy side cuts through the sweet heat of the jerk coating.
Slow-Cooker Jamaican Jerk Chicken
Ingredients
- • 2 1/2 lb boneless, skinless chicken thighs
- • 9 scallions, trimmed
- • 1 small bunch fresh thyme
- • 2 tsp ground allspice
- • 1 tbsp finely grated fresh ginger
- • 4 garlic cloves, finely grated
- • 1 lime, finely zested and juiced
- • 2 tbsp packed brown sugar
- • 1 Scotch bonnet chile, stemmed and finely minced
- • 2 1/4 tsp kosher salt
- • 1/2 tsp freshly ground black pepper
- • 1/2 cup low-sodium chicken broth
- • 1 1/2 cups long-grain white rice
- • 1 (13.5-oz) can coconut milk
- • 1/2 cup water
- • 1 (15-oz) can red kidney beans, drained and rinsed
- • 4 cups thinly sliced green cabbage
- • 1 medium carrot, coarsely grated
- • 1 lime, zested and juiced
- • 1 tbsp apple cider vinegar
- • 1 tbsp olive oil
- • 1 tsp honey
Method
Mix the jerk paste
Thinly slice 6 scallions. Strip about 1 tbsp thyme leaves from the bunch and stir with the allspice, ginger, garlic, zest and juice of 1 lime, brown sugar, 1 1/2 tsp salt, and 1/4 tsp pepper. Mince the Scotch bonnet with gloves, keeping or removing seeds to set the heat, then mix it into a thick paste.
Look for: The paste is moist and aromatic, with no dry pockets of allspice.
Coat and load the chicken
Rub the jerk paste over all the chicken thighs, working it into every fold. Arrange the thighs in a single layer in a 6-quart slow cooker and pour the broth around them so the paste stays on the meat.
Look for: Each thigh has an even coating and the broth pools beneath the meat.
Slow-cook until tender
Cover and cook on low for about 4 hours, until the thickest thigh reaches 175 F and yields easily when pressed with a fork.
Look for: The thickest thigh registers 175 F and separates easily with a fork.
Toss the crisp cabbage side
While the chicken cooks, combine the cabbage and carrot. Whisk the second lime's juice with the vinegar, olive oil, honey, 1/4 tsp salt, and 1/4 tsp pepper; toss with the vegetables and chill until serving.
Look for: The cabbage is lightly glossy but still crisp, with a bright lime-vinegar taste.
Cook rice and peas
Near the end of the chicken's cook, rinse the rice until the water is mostly clear. In a lidded saucepan combine rice, coconut milk, water, beans, 1/2 tsp salt, 2 whole scallions, and 2 thyme sprigs. Bring to a simmer, cover on low for 15 to 18 minutes, then rest off heat for 10 minutes and fluff.
Look for: The liquid is absorbed, the grains are tender, and the beans stay whole.
Move chicken for browning
Use tongs to lift the tender thighs onto a foil-lined rimmed sheet pan, leaving the cooking liquid in the slow cooker for the sauce.
Look for: The chicken holds together when lifted and the pan remains lightly sauced, not flooded.
Brown the edges
Broil the chicken close to the heat for 3 to 4 minutes, turning once, until dark spots appear at the edges; watch closely because the brown sugar can scorch. For a grill, use medium-high heat for about 2 minutes per side instead.
Look for: The edges have a few charred flecks while the centers remain juicy.
Reduce the cooking juices
Pour the cooker juices into a small saucepan, skim excess fat, and simmer briskly for about 5 minutes until they lightly coat a spoon. Rest the chicken while the sauce reduces.
Look for: The sauce is glossy and clings lightly to the back of a spoon.
Finish the chicken
Slice the thighs across the grain or leave them whole, then spoon over just enough reduced jerk sauce to gloss the browned surfaces.
Look for: The browned edges remain visible under a thin, shiny coating of sauce.
Plate and serve
Serve the chicken with the rice and peas and chilled cabbage side. Thinly slice the remaining scallion and scatter it over the chicken just before serving.
Look for: The warm, glossy chicken sits beside fluffy coconut rice and crisp cabbage.
