Classic Barbecue Chicken Dinner

Sticky barbecue chicken meets creamy potatoes, crisp green beans and a bright salad in a complete dinner with reliable oven and grill options.
Glazed chicken thigh and drumstick are served with creamy potatoes, green beans and romaine salad.

Bone-in chicken supplies the centerpiece for this familiar dinner, while a tomato-vinegar sauce adds gentle sweetness and tang. The potatoes cook alongside the first unsauced chicken stage, leaving the quick vegetables and salad for the finish.

Choose steady, indirect heat

The oven and covered grill follow the same sequence: cook the seasoned chicken first, then glaze it late. A two-zone grill keeps the meat away from direct flames, while an oven rack lifts it above its drippings. Leave space between pieces so the skin can brown.

Build a tangy, brushable sauce

Ketchup, cider vinegar and brown sugar make a balanced base, with Worcestershire sauce, smoked paprika and garlic powder adding depth. A brief simmer thickens the sauce enough to cling without becoming stiff. Divide it before basting so the table portion stays clean.

Chicken receives its first coating of barbecue sauce only after the skin has begun to brown.

Use the first cook for the potatoes

Start the potatoes while the chicken cooks without sauce. Draining thoroughly and letting the chunks steam dry keeps the mash creamy rather than watery, while warm milk and butter fold in easily. Covered potatoes can wait briefly as the green beans finish during the chicken's rest.

Check the meat, then finish fresh

A sticky glaze is a surface cue, so use a thermometer to judge the chicken itself. Check every piece away from bone and extend the cooking time if necessary; dark meat is especially tender near the higher target. Dress the romaine, tomato and cucumber salad just before plating to keep its fresh crunch beside the warm sides.

Classic Barbecue Chicken Dinner

4 servings
75 minutes total

Ingredients

  • •  3 lb bone-in, skin-on chicken thighs and drumsticks
  • •  3 tbsp olive oil, divided
  • •  2 tsp kosher salt, divided
  • •  3/4 tsp black pepper, divided
  • •  3/4 cup tomato ketchup
  • •  1/4 cup apple cider vinegar, divided
  • •  2 tbsp brown sugar
  • •  1 tbsp Worcestershire sauce
  • •  1 tsp smoked paprika
  • •  1/2 tsp garlic powder
  • •  2 lb Yukon Gold potatoes
  • •  1/2 cup whole milk
  • •  3 tbsp unsalted butter, divided
  • •  1 lb green beans, trimmed
  • •  1 small head romaine lettuce
  • •  1 cup cherry tomatoes
  • •  1 cucumber

Method

  1. Prepare the cooking station

Heat oven to 400 F, or set a covered grill for two-zone cooking at about 400 F. Set out a roasting tray with rack for the oven option. Wash salad vegetables and trim green beans before handling raw chicken.

Look for: Oven or covered grill is fully heated.

  2. Season the chicken

Pat 3 lb bone-in chicken thighs and drumsticks dry; coat with 1 tbsp olive oil, 1 tsp kosher salt and 1/2 tsp black pepper. Place skin-up on the roasting rack, or on the grill's indirect side with a drip tray beneath.

Look for: Chicken is evenly seasoned; pieces have space between them.

  3. Start cooking without sauce

Roast at 400 F for 35 minutes, or cover and grill over indirect heat for 35 minutes, turning grill pieces halfway through. Cook without barbecue sauce at this stage so the sugar cannot scorch; keep the grill lid closed between checks.

Look for: Skin is beginning to brown; sauce has not yet been applied.

  4. Simmer the barbecue sauce

While chicken cooks, stir tomato ketchup, 3 tbsp apple cider vinegar, brown sugar, Worcestershire sauce, smoked paprika and garlic powder in a small saucepan. Simmer over medium-low heat for 8 minutes, stirring, until lightly thickened. Divide into a basting bowl and a separate clean serving bowl.

Look for: Sauce coats a spoon but remains brushable.

  5. Cook the potatoes concurrently

Meanwhile peel and cut Yukon Gold potatoes into 1-inch chunks. Cover with cold water in a pot; bring to a boil, add 1/2 tsp kosher salt and simmer 15–20 minutes until easily pierced. Drain thoroughly; return to the warm pot for 1 minute to steam dry.

Look for: Potatoes crush easily under a fork; drained surfaces look dry.

  6. Mash and hold warm

Warm whole milk with 2 tbsp unsalted butter. Mash potatoes, fold in the warm milk mixture and 1/4 tsp black pepper until creamy; cover off heat. Set aside the remaining 1 tbsp butter for green beans.

Look for: Mash is creamy without becoming gluey.

  7. Glaze late and check doneness

After the first 35 minutes, brush chicken with basting sauce. Roast or grill indirectly for 10–15 minutes more, brushing again halfway through. Check each piece in its thickest flesh away from bone: at least 165 F, with thighs and drumsticks ideally 175 F. Continue as needed; discard used basting sauce.

Look for: Glaze is sticky and reddish brown, never black; each piece meets the temperature target.

  8. Rest and cook the beans

Rest chicken on a clean platter for 5 minutes. Meanwhile simmer green beans in fresh boiling water for 4–5 minutes until bright and tender-crisp; drain and toss with the remaining 1 tbsp butter and 1/4 tsp kosher salt. Keep potatoes covered.

Look for: Beans retain a slight bite; chicken rests undisturbed.

  9. Dress the simple salad

Whisk remaining 2 tbsp olive oil, remaining 1 tbsp apple cider vinegar and remaining 1/4 tsp kosher salt. Tear romaine lettuce, halve cherry tomatoes and slice cucumber; toss with dressing just before serving so the leaves remain crisp.

Look for: Lettuce is lightly coated and crisp, with no puddle of dressing.

  10. Serve the complete dinner

Divide glazed chicken, creamy potatoes, green beans and salad among four plates. Offer the reserved clean barbecue sauce alongside; never serve sauce from the used basting bowl. Spoon any accumulated cooked chicken juices over the meat.

Look for: Chicken is glossy, potatoes warm, and salad freshly dressed.
