Roasted Cauliflower Salad with Dates and Lemon-Tahini

Caramelized cumin-spiced cauliflower, sweet dates, peppery greens, and lemony tahini make a fresh salad with enough warmth to serve as a meal.

This salad balances ingredients that pull in different directions: deeply browned cauliflower and soft dates bring warmth and sweetness, while arugula, parsley, and lemon keep each bite lively. The tahini dressing ties them together without needing bread or chickpeas.

A warm salad with contrast

The dates are concentrated and sweet, so the salad needs clear acidity and seasoning around them. Lemon juice in the dressing and salt on both the cauliflower and tahini keep that sweetness in balance instead of letting it dominate.

Give the florets room

A single uncrowded layer lets moisture escape while the pan's heat colors the cut faces. If the florets are packed together, they soften in their own steam before their edges have time to brown.

Loosen tahini gradually

Tahini tightens when lemon juice first meets it, then relaxes as cold water is whisked in. Add the water slowly; stop when the dressing falls in a thick ribbon, which is easy to drizzle without flooding the greens.

Build the salad in layers

Letting the cauliflower lose its strongest steam protects the arugula's crisp texture while keeping the bowl warm. A light first coating of dressing seasons the leaves, and the second drizzle brings the lemon-tahini flavor to the dates and florets.

Adjust the finish by taste

Taste a forkful that includes cauliflower and date before serving, since the combined bite reveals whether the sweetness needs more lift. Add lemon for brightness or a little salt for definition, keeping the salad fresh and composed.

Roasted Cauliflower Salad with Dates and Lemon-Tahini

4 servings
55 minutes total

Ingredients

  • •  1 large cauliflower (about 2 lb), cut into 1 1/2-inch florets
  • •  3 tbsp extra-virgin olive oil
  • •  1 tsp ground cumin
  • •  1/2 tsp ground coriander
  • •  1 1/4 tsp kosher salt, divided
  • •  1/4 tsp freshly ground black pepper
  • •  1/3 cup tahini
  • •  1 large lemon, finely zested and juiced (about 3 tbsp juice)
  • •  1 small garlic clove, finely grated
  • •  5 tbsp cold water, plus more as needed
  • •  5 oz baby arugula
  • •  8 Medjool dates (about 6 oz), pitted and thinly sliced
  • •  1/2 cup chopped fresh flat-leaf parsley
  • •  2 tbsp toasted sesame seeds

Method

  1. Heat the oven

Place a rack in the center of the oven and heat to 425 F while you prepare the cauliflower; a fully heated oven helps the florets brown before they soften too far.

Look for: The oven has reached 425 F before the pan goes in.

  2. Season the cauliflower

Cut the cauliflower into similarly sized florets, then toss with olive oil, cumin, coriander, 1 tsp salt, and black pepper until every surface has a light sheen of spice oil.

Look for: Florets are about 1 1/2 inches wide and evenly coated without pooling oil.

  3. Roast until browned

Spread the florets cut-side down in one uncrowded layer on a rimmed sheet pan and roast for 25 to 30 minutes, turning once after 15 minutes, until tender with deeply browned edges.

Look for: The pan has visible open space between florets rather than a piled center. A knife slides into a thick stem easily and the edges are caramelized.

  4. Whisk the dressing

Whisk the tahini, lemon zest, lemon juice, garlic, and remaining 1/4 tsp salt; add the cold water a tablespoon at a time until the dressing is smooth and falls in a thick ribbon from the whisk.

Look for: The tahini loosens from a thick paste into a creamy, pourable dressing.

  5. Prepare the salad additions

Pit and thinly slice the dates, chop the parsley, and arrange the arugula in a wide serving bowl so the leaves are ready to receive the warm cauliflower.

Look for: Date pieces are small enough to distribute through the greens rather than clump together.

  6. Let the cauliflower settle

Transfer the roasted cauliflower off the hot sheet pan and let it stand for about 5 minutes; it should remain warm but stop steaming heavily before it touches the arugula.

Look for: The florets feel warm when touched but no longer send up a strong plume of steam.

  7. Dress the greens lightly

Drizzle about half of the lemon-tahini dressing over the arugula and toss gently until the leaves are lightly coated, adding only enough dressing to gloss them rather than weigh them down.

Look for: The leaves look lightly shiny and remain springy, with no dressing pooling in the bowl.

  8. Compose the salad

Scatter the warm cauliflower and sliced dates over the dressed greens, then add the parsley and toasted sesame seeds so their color and crunch stay visible across the bowl.

Look for: Cauliflower, dates, herbs, and sesame are distributed across the greens rather than buried.

  9. Finish and serve

Drizzle the remaining dressing over the top and taste a bite with cauliflower and date together; add a little more lemon juice or salt from the measured ingredients if needed, then serve while the florets are warm.

Look for: The dates taste sweet but are balanced by clear lemon acidity and enough salt.
