Grilled Asparagus Salad with Soft-Boiled Eggs and Mustard Vinaigrette
Grilled asparagus, jammy eggs, peppery arugula, and soft herbs meet in a crisp, bright salad with a punchy mustard dressing.

This salad pairs warm, char-marked asparagus with cool, tender eggs and peppery greens. A sharp mustard vinaigrette ties the textures together, while dill and chives keep the finish fresh.
Char the asparagus without softening it
A hot grill or grill pan creates dark contact marks before the spears lose their snap. Turn the asparagus frequently and use the first firm resistance in the center as the cue to pull it from the heat.
Stop the eggs at a jammy center
Lowering eggs into already boiling water makes the cook time easy to repeat. A five-minute ice-water bath halts carryover cooking, and peeling under cool running water helps separate the shell without tearing the whites.

Balance the mustard dressing
Dijon helps the lemon juice and vinegar stay suspended in the olive oil, while minced shallot gives the dressing a savory edge. Whisking the oil in gradually makes a glossy vinaigrette that clings to the greens instead of running to the platter.
Layer the salad while the asparagus is warm
Dress the arugula sparingly first, then place the warm asparagus above it so the leaves stay lively. Halved eggs and a scatter of dill and chives make the platter easy to portion and bring herbal freshness to each bite.

Adjust for thick or thin spears
Thin asparagus may be ready before the full grilling window, so lift a spear as soon as its surface blisters and it still bends with resistance. If thicker spears remain raw in the center, move them to a cooler part of the grill briefly rather than leaving them over direct heat until limp.
Grilled Asparagus Salad with Soft-Boiled Eggs and Mustard Vinaigrette
Ingredients
- • 1 lb medium asparagus, woody ends snapped off
- • 4 large eggs
- • 6 tbsp extra-virgin olive oil, divided
- • 2 tbsp Dijon mustard
- • 1 1/2 tbsp white wine vinegar
- • 1 medium lemon, zested and juiced
- • 1 small shallot, finely minced
- • 1/2 tsp kosher salt, divided
- • 1/4 tsp freshly ground black pepper, divided
- • 4 oz baby arugula
- • 2 tbsp chopped fresh dill
- • 2 tbsp chopped fresh chives
Method
Bring water to a boil
Set the eggs aside while you fill a saucepan with enough water to cover them by 1 inch, then bring the water to a boil over high heat.
Look for: The water is bubbling vigorously before the eggs go in.
Cook the eggs
Lower the eggs into the boiling water with a spoon, reduce the heat to maintain a gentle simmer, and cook for 7 minutes for set whites and jammy yolks.
Look for: Small bubbles rise steadily without the eggs bouncing against the pan.
Cool and peel the eggs
Move the eggs straight into a bowl of ice water for 5 minutes to stop the cooking; crack each shell all over and peel under cool running water.
Look for: The eggs feel cool, and water slips between the shell membrane and white as you peel.
Whisk the vinaigrette
Whisk the shallot, Dijon mustard, white wine vinegar, lemon zest and juice, 1/4 teaspoon salt, and 1/8 teaspoon pepper; gradually whisk in 4 tablespoons olive oil until emulsified.
Look for: The vinaigrette looks glossy and lightly thickened, with no oil pooling on top.
Season the asparagus
Snap off any woody asparagus ends, pat the spears dry, then toss them with the remaining 2 tablespoons olive oil and the remaining 1/4 teaspoon salt and 1/8 teaspoon pepper.
Look for: The asparagus has a thin, even sheen of oil and seasoning.
Heat the grill
Preheat an outdoor grill to medium-high with the lid closed, or heat a dry grill pan over medium-high until very hot; clean and lightly oil the cooking surface if needed.
Look for: A drop of water sizzles and evaporates quickly on the hot grill pan.
Grill until charred and snappy
Lay the asparagus across the grill grates or in the grill pan and cook for 5 to 7 minutes, turning every 1 to 2 minutes, until marked in spots but still firm at the center.
Look for: The spears show distinct dark marks, remain bright green, and bend slightly without going limp.
Dress the greens
Toss the baby arugula with just enough vinaigrette to lightly coat the leaves, spread it on a platter, then lay the warm grilled asparagus over the greens and spoon on more dressing.
Look for: The leaves look lightly glossy rather than wet, and the asparagus remains the main layer.
Finish and serve
Halve the peeled eggs and arrange them over the salad, then scatter the dill and chives across the platter and serve with any remaining vinaigrette at the table.
Look for: The jammy yolks face upward and the herbs are spread evenly over the warm asparagus.
