Quinoa Salad with Roasted Sweet Potato and Pepitas
Rinsed quinoa stays fluffy beside browned sweet potato, while lime, cumin, herbs, and crisp pepitas keep the salad bright and textured.

This grain salad pairs quinoa that has been rinsed and rested with sweet potato roasted until browned but still intact. A lime-cumin dressing, fresh scallions, cilantro, and toasted pepitas bring acidity, aroma, and crunch to each forkful.
Rinse, simmer, then rest
Rinsing removes surface starch that can make quinoa taste dusty or clump after cooking. Letting it sit covered off the heat finishes the grains gently, and fluffing afterward releases trapped steam so the salad stays light.
Brown the potato without breaking it
Even cubes and open space on the pan give the sweet potato a chance to color before its centers turn soft. Turn the pieces once, then stop roasting when a fork meets slight resistance; they should hold together during the final toss.

Let lime lead the dressing
Fresh lime juice cuts through the sweet potato's richness, while cumin adds a warm note that connects the grain and vegetables. Whisking in the olive oil and honey gives the dressing enough body to cling to the quinoa without masking the herbs.
Finish with herbs and crunch
Fold the browned cubes through the dressed quinoa with a light hand, then add scallions and cilantro for fresh, sharp edges. Pepitas belong on top at the end, where their toasted crunch stays distinct whether the salad is served warm or at room temperature.

Quinoa Salad with Roasted Sweet Potato and Pepitas
Ingredients
- • 1 cup white quinoa
- • 1 3/4 cups water
- • 1 lb sweet potato
- • 3 tbsp extra-virgin olive oil, divided
- • 1 tsp kosher salt, divided
- • 1/4 tsp black pepper
- • 1/2 tsp ground cumin
- • 2 medium limes
- • 1 tsp honey
- • 1/3 cup raw pepitas
- • 3 scallions
- • 1/2 cup packed fresh cilantro leaves and tender stems, chopped
Method
Heat the oven
Set a rack in the center of the oven and heat to 425 F so the pan is hot enough to brown the sweet potato rather than steam it.
Look for: The oven is fully preheated before the potato goes in.
Season the sweet potato
Cut the sweet potato into even 3/4-inch cubes, then toss with 1 tbsp olive oil, 1/2 tsp salt, and the black pepper; spread in one uncrowded layer on a rimmed sheet pan.
Look for: The cubes have a thin sheen of oil and space between their edges.
Roast until browned
Roast the sweet potato for 25 minutes, turning the cubes once halfway through, until browned on several faces and just tender enough to pierce without collapsing.
Look for: The cubes release from the pan and hold their shape when turned.
Rinse and cook the quinoa
Rinse the quinoa in a fine-mesh sieve under cool water until it runs clear, drain well, then combine with the water and 1/4 tsp salt in a saucepan; bring to a boil, cover, and simmer on low for 15 minutes.
Look for: The water is absorbed and the quinoa grains show loose, curled tails.
Rest and loosen the quinoa
Turn off the heat and leave the quinoa covered for 5 minutes, then uncover and fluff gently with a fork so steam escapes and the grains stay separate.
Look for: The grains look light and separate instead of wet or compacted.
Toast the pepitas
Toast the pepitas in a dry skillet over medium heat, shaking often, until several pop and the seeds smell nutty; transfer them to a plate so residual heat does not darken them.
Look for: The pepitas are lightly golden in spots and fragrant, not browned all over.
Whisk the lime-cumin dressing
Finely zest one lime and squeeze both limes to measure 2 tbsp juice; whisk the juice and zest with the remaining 2 tbsp olive oil, cumin, honey, and remaining 1/4 tsp salt until emulsified.
Look for: The dressing tastes bright, gently earthy, and evenly seasoned.
Assemble and serve
Thinly slice the scallions and chop the cilantro, then toss the fluffy quinoa with the dressing; fold in the sweet potato gently to keep the cubes intact, add the herbs, and finish with toasted pepitas.
Look for: The dressing coats the grains while the browned potato cubes remain distinct.
