Herbed Couscous Salad with Cucumber, Apricots, and Pistachios

A bright, make-ahead couscous salad balances cool cucumber and fresh herbs with sweet apricots, lemon, and crunchy pistachios.
Fluffy couscous salad is tossed with cucumber, apricots, parsley, mint, and toasted pistachios.

This picnic salad is built around a simple texture contrast: fluffy grains, crisp cucumber, chewy apricot, and toasted pistachio. Lemon and olive oil keep the dressing fresh, while mint and parsley make the bowl taste lively even after chilling.

Cooling the couscous before dressing is the small step that keeps the salad loose instead of sticky. The nuts go in at the end, so the prepared salad can wait in the refrigerator without losing its crunch.

Give couscous room to cool

A covered five-minute rest lets the couscous absorb the boiling water evenly. Fluffing with a fork and spreading the grains on a tray releases steam quickly, which helps prevent clumps when the dressing is added.

Wait until the grains feel cool before tossing them with lemon and oil. The dressing then clings lightly to separate grains instead of soaking into a warm mass.

Balance sweet and fresh

Dried apricots bring concentrated sweetness, so lemon juice and crisp cucumber keep each mouthful from feeling heavy. Parsley and mint add a fresh, green note that runs through the whole bowl rather than sitting only on top.

Cutting the cucumber into pieces close to the apricot size makes the mix easy to scoop and helps the ingredients distribute evenly through the couscous.

Dress gently

Whisking lemon zest and juice with olive oil spreads the citrus through the salad without flooding the grains. Toss with a fork using light lifting motions, then fold in the cucumber, scallions, and herbs so they stay recognizable.

A short chill gives the lemon and herbs time to season the couscous. If preparing it earlier, keep the bowl covered and reserve the pistachios until serving.

Make it travel well

This salad can be chilled ahead and packed in a covered container for lunch. Keep it cold during transport and carry the pistachios separately if the wait will be long, folding them in at the table to preserve their toasted crunch.

For serving, fluff the salad once with a fork so the herbs and fruit lift back through the grains. The bowl is satisfying on its own and also fits beside grilled vegetables or a simple bean dish.

Herbed Couscous Salad with Cucumber, Apricots, and Pistachios

4 servings
37 minutes total

Ingredients

  • •  1 1/2 cups plain couscous
  • •  1 1/2 cups water
  • •  1 tbsp extra-virgin olive oil, for couscous
  • •  3 tbsp extra-virgin olive oil, for dressing
  • •  1/2 tsp fine salt
  • •  1 large lemon, zested and juiced
  • •  1/4 tsp freshly ground black pepper
  • •  1/3 cup shelled unsalted pistachios, roughly chopped
  • •  1 medium English cucumber, diced
  • •  1/2 cup chopped dried apricots
  • •  1/2 cup chopped fresh flat-leaf parsley
  • •  1/4 cup chopped fresh mint
  • •  2 scallions, thinly sliced

Method

  1. Toast the pistachios

Toast the pistachios in a dry skillet over medium-low heat, stirring often, until fragrant and lightly golden; transfer them to a plate to cool so they stay crisp.

Look for: The nuts smell toasted and show a few light golden spots without dark edges.

  2. Hydrate the couscous

Bring the water, 1 tbsp olive oil, and 1/4 tsp salt to a boil; pour it over the couscous in a heatproof bowl, stir once, cover, and leave undisturbed for 5 minutes.

Look for: After resting, the liquid is absorbed and the grains look plump rather than wet.

  3. Fluff and cool the grains

Rake through the couscous with a fork to separate the grains, then spread it in a thin layer on a rimmed tray and let it cool to room temperature before dressing.

Look for: The couscous feels loose and no longer releases steam; a thin layer cools evenly.

  4. Mix the lemon dressing

In a small bowl whisk the lemon zest and juice with 3 tbsp olive oil, the remaining 1/4 tsp salt, and the black pepper until the dressing looks lightly emulsified.

Look for: The oil and lemon juice are combined and the salt has dissolved.

  5. Prepare the fresh ingredients

Dice the cucumber into small, even pieces and thinly slice the scallions; chop the apricots, parsley, and mint so each bite will carry a little fruit and herb.

Look for: The cucumber pieces are similar in size to the chopped apricots and herbs.

  6. Dress the couscous

Transfer the cooled couscous to a large bowl, drizzle over the lemon dressing, and toss gently with a fork until the grains are evenly coated without clumping.

Look for: The grains remain separate and have a light sheen rather than pooling dressing.

  7. Fold in cucumber and herbs

Add the cucumber, apricots, scallions, parsley, and mint; fold until distributed, then cover and chill for 15 minutes to let the lemon and herbs season the grains.

Look for: The herbs are evenly scattered and the chilled salad smells bright and lemony.

  8. Finish and pack

Just before serving, fold in the cooled pistachios so they stay crunchy; pack the salad in a covered container and keep it chilled for a picnic or make-ahead lunch.

Look for: Pistachios remain crisp and distinct, and the salad is cold when packed for travel.
