Classic Broccoli and Cheese Casserole
A short blanch keeps broccoli bright and tender, while a gently thickened cheddar sauce and crisp buttered crumbs make the casserole feel composed rather than heavy.

This casserole keeps its familiar broccoli-and-cheese character by building the sauce from a pale roux and real cheddar. Brief blanching gives the florets a head start, so they finish tender without turning dull or waterlogged in the oven.
Blanch for a bright finish
The broccoli gets only a short turn in boiling water before it is drained and dried. That quick cook softens the centers while preserving enough structure to hold up through the bake.
Start with a pale roux
Flour cooked gently in butter gives the milk and vegetable broth a steady base to thicken against. Whisking the liquids in gradually prevents lumps, and a quiet simmer lets the sauce coat a spoon before the cheese goes in.

Melt cheddar gently
Taking the saucepan off the heat before adding cheddar helps the sauce stay creamy instead of separating into oil and solids. Freshly grated cheese melts smoothly when stirred in a few handfuls at a time.
Save the crunch for the oven
The cracker topping is buttered and added just before baking, which keeps it crisp even when the broccoli and sauce are prepared ahead. A short rest after baking lets the sauce settle without losing the contrast of the golden crumbs.

Plan the make-ahead bake
Assemble the broccoli and sauce in the baking dish, but keep the buttered crumbs separate until the casserole is ready for the oven. Bake it straight from the refrigerator for a little longer, watching for bubbling edges and a crisp, golden top rather than relying only on the clock.
Classic Broccoli and Cheese Casserole
Ingredients
- • 2 lb broccoli florets, cut bite-size
- • 6 tbsp unsalted butter, divided
- • 1/4 cup all-purpose flour
- • 2 cups whole milk
- • 1 cup low-sodium vegetable broth
- • 1 tsp kosher salt
- • 1/2 tsp dry mustard
- • 1/4 tsp freshly ground black pepper
- • 8 oz sharp cheddar, freshly grated
- • 1 cup buttery round crackers, finely crushed
Method
Heat the oven
Set a rack in the center and heat the oven to 375 F. Rub 1 tbsp of the butter over the base and sides of a 9-by-13-inch baking dish.
Look for: The oven is fully preheated and the dish has a thin, even butter coating.
Blanch the broccoli
Lower the broccoli florets into a large pot of boiling water and blanch for 2 minutes, just until vivid green and barely tender. Drain, then spread on a towel so excess water does not thin the sauce.
Look for: The broccoli is bright green, still holds its shape, and has stopped steaming after draining.
Make the roux
Melt 4 tbsp butter in a saucepan over medium-low heat. Whisk in the flour and cook until the paste is smooth and pale, with no dry flour or raw flour smell.
Look for: The roux bubbles gently and stays pale rather than browning.
Thicken the sauce
Gradually whisk the milk and vegetable broth into the roux until smooth. Bring to a gentle simmer, whisking often, and cook until the sauce lightly coats the back of a spoon.
Look for: The sauce is glossy and thick enough to leave a clear trail when a finger crosses the spoon.
Season and melt in cheddar
Take the saucepan off the heat and stir in the salt, dry mustard, and black pepper. Add the cheddar by handfuls, stirring until each addition melts into a smooth sauce before adding more.
Look for: The cheddar sauce is creamy and uniform, with no oily beads around the edges.
Combine and fill the dish
Fold the drained broccoli florets through the cheddar sauce, coating them evenly, then spread the mixture in the prepared baking dish. For make-ahead, cover and refrigerate the casserole and keep the cracker crumbs separate for up to 1 day.
Look for: Broccoli is coated without pooling sauce, and the casserole sits in an even layer.
Top and bake
Melt the remaining 1 tbsp butter and toss it with the cracker crumbs, then scatter them over the casserole. Bake uncovered at 375 F for 25 to 30 minutes, or 10 to 15 minutes longer if baking straight from the refrigerator, until bubbling at the edges and golden on top.
Look for: The sauce bubbles around the edges and the buttered cracker topping is crisp and golden.
Rest before serving
Let the casserole stand for 10 minutes so the sauce settles around the broccoli. Serve warm, lifting portions from the bottom so every serving includes sauce and crisp topping.
Look for: The sauce clings to the broccoli instead of running into the serving plate.
