Classic Beef Nachos with Jalapeños

A fast skillet beef topping and a short sheet-pan bake make a generous shareable platter with melted cheese and crisp chips.
A wide sheet pan holds crisp-edged beef and black bean nachos with melted cheese, jalapeños, salsa, sour cream, and scallions.

These nachos use the oven only long enough to melt the cheese, which keeps the tortilla chips from turning stale or leathery. Seasoned ground beef and black beans make each handful substantial, while salsa and sour cream go on at the end.

Prepare the toppings before layering

Drain the beans and pickled jalapeños while the oven heats, and grate the cheeses so they melt smoothly. Having salsa, sour cream, and scallions ready beside the pan keeps the final serving quick.

Build flavor in the skillet

Let the beef brown in small crumbles before adding the spices, then use a little water to distribute the seasoning across the meat. The brief simmer leaves the mixture flavorful without adding so much moisture that it soaks through the chips.

Keep the chips in a shallow layer

A wide rimmed sheet pan spreads the toppings over more chips and gives heat room to circulate. Light overlap at the edges is fine, but a deep pile makes it harder for cheese to melt before the lower chips soften.

Watch for the cheese cue

The oven time is deliberately brief: pull the pan when the cheese looks glossy and has melted over the toppings. If chips are left in until their edges darken, they can taste dry before the center is ready to serve.

Add cool toppings after baking

Salsa and sour cream bring cool, tangy contrast, while scallions add a fresh onion note. Spoon them on only after the pan leaves the oven so their moisture does not steam the chips.

Serve while the pan is hot

Set the sheet pan out as soon as the toppings are added and let everyone take a mix of beef, beans, cheese, and jalapeño. The platter is best right away, before the salsa begins to soften the crisp edges.

Ingredients

  • •  12 oz sturdy restaurant-style tortilla chips
  • •  1 tbsp neutral oil
  • •  1 lb 90% lean ground beef
  • •  1 tsp chili powder
  • •  1 tsp ground cumin
  • •  1/2 tsp garlic powder
  • •  3/4 tsp kosher salt
  • •  1/4 tsp freshly ground black pepper
  • •  1/4 cup water
  • •  1 can (15 oz) black beans, drained and rinsed
  • •  6 oz sharp cheddar cheese, freshly grated
  • •  6 oz Monterey Jack cheese, freshly grated
  • •  1/3 cup pickled jalapeño rings, drained
  • •  1 cup chunky salsa
  • •  1/2 cup sour cream
  • •  3 scallions, thinly sliced

Method

  1. Heat the oven

Set a rack in the center of the oven and heat to 425 F so the cheese melts quickly before the chips have time to dry out.

Look for: The oven signals that it has reached 425 F before the nachos go in.

  2. Prepare the toppings

Drain and rinse the black beans, drain the jalapeño rings, grate both cheeses, and thinly slice the scallions while the oven heats.

Look for: The beans and jalapeños are well drained, and the cheese is loosely grated for even melting.

  3. Brown the beef

Heat the oil in a large skillet over medium-high heat, add the ground beef, and break it into small crumbles as it cooks until browned with no pink remaining, about 5 to 6 minutes.

Look for: The beef is browned in small crumbles and reaches 160 F; spoon off excess fat if the skillet is oily.

  4. Season the beef

Stir in the chili powder, cumin, garlic powder, salt, black pepper, and water, then simmer for 2 minutes, stirring, until the spices coat the beef and no watery pool remains.

Look for: The beef is fragrant and lightly saucy, not wet enough to soak the chips.

  5. Arrange the chips

Spread the tortilla chips across a large rimmed sheet pan in one mostly single layer, overlapping only at the edges so toppings can reach most chips.

Look for: Most chips remain visible in one layer rather than buried in a tall pile.

  6. Add the hearty toppings

Scatter the drained black beans and seasoned beef evenly over the chips, then cover with both cheeses and finish with the drained jalapeño rings.

Look for: Beef, beans, cheese, and jalapeños are distributed from edge to edge without leaving one heavily loaded center.

  7. Melt the cheese

Bake the pan at 425 F for 4 to 6 minutes, checking early and pulling it as soon as the cheese is glossy and melted so the chips stay crisp.

Look for: The cheese has melted over the toppings while chip edges remain dry and crisp.

  8. Finish and serve

Spoon salsa and sour cream over the hot nachos in small dollops, scatter the sliced scallions on top, and serve immediately from the pan.

Look for: Cool salsa and sour cream are added only after baking, keeping the chips crisp underneath.
