27 min · 5 people sharing

Ingredients

□ 12 oz sturdy restaurant-style tortilla chips

□ 1 tbsp neutral oil

□ 1 lb 90% lean ground beef

□ 1 tsp chili powder

□ 1 tsp ground cumin

□ 1/2 tsp garlic powder

□ 3/4 tsp kosher salt

□ 1/4 tsp freshly ground black pepper

□ 1/4 cup water

□ 1 can (15 oz) black beans, drained and rinsed

□ 6 oz sharp cheddar cheese, freshly grated

□ 6 oz Monterey Jack cheese, freshly grated

□ 1/3 cup pickled jalapeño rings, drained

□ 1 cup chunky salsa

□ 1/2 cup sour cream

□ 3 scallions, thinly sliced

Directions

1. Heat oven to 425 F. Drain beans and jalapeños; grate cheeses and slice scallions.

2. Brown beef in oil until it reaches 160 F. Stir in spices and water; simmer until lightly saucy.

3. Spread chips mostly in one layer. Scatter on beans and beef, cover with cheeses, then add jalapeños.

4. Bake 4 to 6 minutes, just until cheese melts. Add salsa, sour cream, and scallions; serve at once.

Cook’s note: Use a wide sheet pan and stop baking as soon as the cheese melts to protect crisp chips.
