Cheesy Hash Brown Casserole

A pantry-built cheddar sauce keeps this vegetarian potato casserole creamy without canned soup, while a buttered crisp topping gives every scoop a browned edge.

This potluck side is built around tender shreds that remain recognizable beneath a smooth cheddar sauce. A quick flour-and-milk base brings the sauce together from pantry staples, then sour cream adds tang after the pan comes off the heat.

Build a sauce that clings

Cooking flour briefly in butter gives the milk enough body to coat the potatoes without canned soup. Add the milk gradually and keep whisking; once it thickens, stirring in the sour cream and cheddar off the heat keeps the sauce smooth.

Keep the potato texture

Thawed potatoes can carry extra moisture, which dilutes the sauce and makes the casserole heavy. Blot the shreds, then fold them gently until coated so they bake as distinct, tender strands instead of a compact mass.

Choose one crisp topping

Buttered crushed cornflakes make the default topping light and crunchy. If choosing the breadcrumb option, replace the cornflakes with the measured breadcrumbs and toss them with the same melted butter; using one branch keeps the top crisp rather than crowded.

Rest before carrying

The casserole is ready when its edges bubble and the topping is richly golden. A short rest lets the creamy center settle enough to serve neatly, while fresh chives bring a gentle onion note to the warm potatoes.

Cheesy Hash Brown Casserole

8 servings
80 minutes total

Ingredients

  • •  2 lb frozen shredded potatoes, fully thawed
  • •  1 tbsp unsalted butter, softened, for the baking dish
  • •  3 tbsp unsalted butter, for the sauce
  • •  3 tbsp all-purpose flour
  • •  1 cup whole milk
  • •  1 cup sour cream
  • •  8 oz sharp cheddar cheese, grated
  • •  1 tsp kosher salt
  • •  1/2 tsp dry mustard powder
  • •  1/4 tsp garlic powder
  • •  1/4 tsp black pepper
  • •
  • •  4 tbsp unsalted butter, melted, for the topping
  • •  2 tbsp chopped fresh chives

Method

  1. Heat the oven and prepare the dish

Set a rack in the center and heat the oven to 350 F. Coat a 9-by-13-inch baking dish with the softened butter so the casserole releases cleanly.

Look for: The dish has a thin, even butter coating with no dry corners.

  2. Dry the potatoes gently

Spread the thawed shredded potatoes on a clean towel and blot away surface moisture, lifting the shreds rather than squeezing them into a compact mass.

Look for: The shreds feel damp but no longer leave wet patches on the towel.

  3. Start the cheddar sauce

Melt the sauce butter in a medium saucepan over medium heat. Whisk in the flour and cook, whisking, until the paste bubbles evenly and smells lightly nutty without browning.

Look for: The flour paste is smooth, pale, and bubbling across the pan.

  4. Thicken the milk

Pour in the milk gradually while whisking to keep the sauce smooth. Cook over medium heat, stirring along the bottom, until it thickly coats a spoon.

Look for: A finger drawn across the spoon leaves a clear path in the sauce.

  5. Melt in the cheese

Remove the saucepan from the heat and stir in the sour cream, grated cheddar, salt, dry mustard powder, garlic powder, and black pepper until the cheese melts into a creamy sauce.

Look for: The sauce is glossy and evenly seasoned, with no unmelted cheddar clumps.

  6. Coat the potatoes

Add the potatoes to a large bowl, pour the cheddar sauce over them, and fold with a broad spatula just until coated so the shreds stay distinct rather than mashed together.

Look for: Most shreds are coated and still separate when lifted by the spatula.

  7. Add the crisp topping

Spread the potato mixture evenly in the prepared dish. Toss the crushed cornflakes with the melted topping butter and scatter them over the surface; if using breadcrumbs, replace the cornflakes with 1 cup plain dry breadcrumbs and toss them with the same butter.

Look for: The topping forms an even layer and the potato mixture remains loosely packed.

  8. Bake until bubbling

Bake at 350 F until the sauce bubbles at the edges and the topping turns deeply golden and crisp. If the top browns before the center bubbles, tent it loosely with foil and continue baking.

Look for: The edges bubble steadily and the center is hot when gently pressed with a spoon.

  9. Rest and serve

Let the casserole rest for 10 minutes so the sauce settles around the potatoes. Scatter the chopped chives over the top and serve warm while the crust is crisp.

Look for: A serving holds together while the interior remains moist and tender.
