Teriyaki Sauce

38 min · 1.25 cups

Ingredients

□ 1/2 cup Japanese soy sauce (shoyu)

□ 1/2 cup mirin

□ 1/2 cup sake

□ 1/4 cup granulated sugar

□ 3 thin slices fresh ginger (optional)

Directions

1. Combine soy sauce, mirin, sake, sugar, and optional ginger. Warm gently, stirring until the sugar dissolves.

2. Simmer uncovered, stirring now and then, until glossy and reduced.

3. Check for a thin spoon coating; extend the bare simmer if watery. Strain out ginger when used.

4. Cool fully to thicken, then brush on food or serve for dipping. Refrigerate leftovers covered.

Cook’s note: The sauce thickens as it cools, so stop reducing while it still pours easily.
