Steak and Eggs

25 min · 2 servings

Ingredients

□

□ 1 tbsp unsalted butter

□ 1/2 tsp kosher salt

□ 1/4 tsp freshly ground black pepper

□ 2 large eggs

□ 2 slices sturdy bread, optional for toast

□ 1 cup prepared breakfast potatoes, optional side

Directions

1. Prepare optional toast or warm potatoes. Dry and season the sirloin, or use the listed strip-steak alternative with the same preparation.

2. Heat cast iron until very hot. Sear steak 3 to 4 minutes per side, butter-baste, and verify 145 F at center.

3. Rest steak at least 3 minutes off heat. Lower the skillet and melt the remaining butter with the drippings.

4. Fry eggs to the requested yolk texture, then slice steak across the grain and serve with an optional side.

Cook’s note: Let the steak rest off the skillet while the pan settles before the eggs go in.
