Sriracha Mayo
Creamy mayonnaise, measured sriracha, lime, and restrained garlic and sesame make a balanced spicy sauce that improves with a short rest.

Ingredients
1 cup mayonnaise
2 tbsp sriracha
2 tsp fresh lime juice
1 small garlic clove, finely grated
1/4 tsp toasted sesame oil
1/8 tsp fine salt
Equipment
Small mixing bowl · Measuring spoons · Whisk · Microplane or fine grater
Build the base
01. Measure the mayonnaise and seasonings first so the chile can be added gradually.
02. Stir 1 tbsp sriracha into the mayonnaise, then add the second tbsp for medium heat; use 1 tbsp total for mild or 3 tbsp total for hot.
03. Add lime, garlic, sesame oil, and salt, keeping the sesame measured so it stays in the background.
Mix and chill
04. Whisk and scrape the bowl until the sauce is glossy, smooth, and free of oil beads.
05. Cover and refrigerate for 15 minutes; the rest lets chile, lime, garlic, and sesame settle into the creamy base.
Adjust and serve
06. Stir, taste, and add sriracha by the teaspoon for heat or lime by the quarter teaspoon for tang, tasting after each addition.
