Spanish Potato Tortilla Wedges
A gentle olive-oil cook keeps the potatoes tender, while a controlled plate flip gives the thick tortilla color on both sides.

This Spanish-style tortilla turns a short list of potatoes, onion, eggs, olive oil, and salt into a sturdy tapas bite. Slow, gentle cooking protects the potato texture, and the plate-assisted flip finishes the thick round without breaking it.
Slice for even tenderness
Thin, consistent potato slices soften at the same pace and fold neatly into the egg. Keep the onion fine as well, so it becomes tender alongside the potatoes rather than remaining a firm strand in each wedge.
Cook slowly in olive oil
The oil should shimmer gently, with no hard sizzling or rapid browning. Turn the slices now and then so they soften evenly; the finished potatoes should yield easily to a knife and the onion should look translucent.

Let the egg settle around the slices
After draining, fold the warm potato mixture through the beaten egg without crushing the slices. A short rest lets the egg coat the vegetables and helps the tortilla set as one tender layer.
Use a supported flip
When the bottom is golden and the rim is firm, turn off the burner and cover the skillet with a plate wider than its rim. Grip both with dry oven mitts and invert over a clear counter, then slide the tortilla back gently instead of trying to toss it.

Rest before cutting
A brief rest lets the egg finish setting and makes the edges easier to slice cleanly. Cut the tortilla into small wedges and serve it warm or at room temperature as part of a tapas spread.
Spanish Potato Tortilla Wedges
Ingredients
- • 1 lb Yukon Gold potatoes, peeled
- • 1 medium yellow onion, thinly sliced
- • 6 large eggs
- • 1 cup extra-virgin olive oil
- • 1 tsp kosher salt, divided
Method
Slice the potatoes and onion
Peel the Yukon Gold potatoes and slice them crosswise about 1/8 inch thick for even, gentle cooking. Thinly slice the yellow onion and keep it separate until the potatoes are ready to cook.
Look for: The potato slices are uniformly thin and the onion strands are not clumped together.
Cook the potatoes gently
Heat the olive oil in a 10-inch nonstick skillet over medium-low until it shimmers softly, then add the potatoes, onion, and 1/2 tsp salt. Cook for 18 to 22 minutes, turning the slices gently every few minutes, until fully tender without hard browning.
Look for: A knife slips easily through a potato slice and the onion is soft and translucent, with no dark edges.
Drain and reserve the oil
Lift the tender potatoes and onion into a large bowl with a slotted spoon. Carefully pour the hot oil through a fine-mesh strainer into a heatproof bowl, then let the skillet and oil settle briefly; reserve the oil for the tortilla.
Look for: The potato-onion mixture is drained, and the reserved oil is clear of loose pieces.
Fold the potatoes into eggs
Beat the eggs with the remaining 1/2 tsp salt in a large bowl until blended but not foamy. Fold in the warm potatoes and onion without crushing them, then let the mixture stand for 10 minutes so the slices absorb some egg.
Look for: The egg coats the slices and gathers at the bottom without turning frothy.
Warm the skillet
Return the 10-inch nonstick skillet to medium-low heat and add 1 tbsp of the reserved olive oil. Swirl to coat the base; the oil should shimmer gently but not smoke before the egg mixture goes in.
Look for: The skillet surface is evenly coated and the oil shimmers without smoking.
Set the first side
Pour in the potato-egg mixture and spread it into an even thick layer. Cook over medium-low for 5 to 6 minutes, loosening the rim occasionally, until the bottom is golden and the edges are set while the center remains just a little glossy.
Look for: The tortilla releases around the edge and its top is mostly set but still moist.
Flip with a plate
Turn off the burner. Place a flat, heatproof plate slightly wider than the skillet over it; with dry oven mitts, hold the plate firmly against the pan and invert both in one controlled motion over a clear counter, keeping hands and face away from the pan. Lift the skillet away, then slide the tortilla back in uncooked side down.
Look for: The tortilla lands intact on the plate and returns to the skillet with its pale side down.
Finish the second side
Cook over medium-low for 3 to 4 minutes, until the second side is golden and the center is set but still moist. Check the center from the side with an instant-read thermometer; it should reach 160 F.
Look for: The second side is lightly golden and the center reaches 160 F without becoming dry.
Rest and cut into wedges
Slide the tortilla onto a clean plate and rest it for 5 minutes so the layers settle before cutting. Slice into small wedges and serve warm or at room temperature.
Look for: The tortilla holds clean wedge edges and remains tender through the center.
