Southern-Style Fried Green Tomatoes

A buttermilk dip and a seasoned cornmeal crust turn firm green tomatoes into crisp, tender rounds for serving straight from the skillet.

Firm unripe tomatoes are sturdy enough to take a shallow fry while staying tender in the middle. A short salting and drying step removes surface moisture, helping the coating cling and the rounds keep their shape.

The skillet temperature and batch size do much of the work: steady, hot oil crisps the crust before the tomato softens, while space between rounds prevents steaming.

Start with firm rounds

Choose green tomatoes that feel firm when pressed and slice them evenly so they cook at the same pace. Salting draws moisture to the surface; blotting that moisture away leaves a better surface for the buttermilk and dry coating to grip.

Build a coating that stays put

The buttermilk gives the flour and cornmeal something to adhere to, while a brief rest lets the coating hydrate before it meets the hot oil. Press the mixture around the edges as well as across each face for an even crust.

Control the skillet

A shallow oil layer is enough when each round has room and is turned once. Keep the oil near its target temperature and fry only a few pieces per batch; a crowded skillet cools quickly and leaves the crust pale or greasy.

Drain on a rack and serve

A wire rack lets steam escape from the underside, preserving the crunch as each batch finishes. Serve the rounds hot, either plain or with the optional sour-cream dip sharpened with lemon, hot sauce, and dill pickle.

Southern-Style Fried Green Tomatoes

4 servings
45 minutes total

Ingredients

  • •  3 medium firm unripe green tomatoes (about 1 1/2 lb)
  • •  1 tsp kosher salt, divided
  • •  1 cup all-purpose flour
  • •  3/4 cup fine yellow cornmeal
  • •  1 tsp garlic powder
  • •  1/2 tsp black pepper
  • •  1/4 tsp cayenne pepper
  • •  1 cup buttermilk
  • •  2 cups canola oil, or enough for 1/4-inch depth
  • •  1/2 cup sour cream
  • •  1 tbsp lemon juice
  • •  1 tsp hot sauce
  • •  1 tbsp finely chopped dill pickle

Method

  1. Slice and salt the tomatoes

Cut the firm green tomatoes crosswise into 1/2-inch rounds, discarding the stem ends. Sprinkle both sides with half the kosher salt and rest on a towel for 15 minutes, then blot dry so the coating adheres and the slices stay intact.

Look for: The rounds feel dry on the surface and remain firm when lifted.

  2. Stir the tangy dip

For the optional dip, stir the sour cream, lemon juice, hot sauce, and chopped dill pickle together until smooth. Refrigerate it while the tomatoes fry, or omit it and serve the tomatoes on their own.

Look for: The dip tastes tangy and lightly peppery, with small pickle pieces throughout.

  3. Season the coating

Whisk the all-purpose flour, cornmeal, garlic powder, black pepper, cayenne, and remaining kosher salt in a shallow dish until the spices are evenly distributed. Set the buttermilk in a second shallow dish for dipping.

Look for: The dry mixture looks uniform with no visible clumps of seasoning.

  4. Coat the rounds

Dip each tomato round in buttermilk, let excess drip away, then press it into the seasoned flour-cornmeal mixture on both sides and around the edges. Arrange coated rounds in one layer and rest them for 5 minutes so the crust can hydrate and hold during frying.

Look for: A dry, even coating clings to each round without bare wet patches.

  5. Heat a shallow layer of oil

Pour the canola oil into a heavy 12-inch skillet to a depth of about 1/4 inch and heat over medium until it reaches 350 F. Keep a thermometer in the oil and adjust the burner as needed to hold the temperature near that mark.

Look for: The oil shimmers and reads 350 F without smoking.

  6. Fry in uncrowded batches

Carefully add only 3 to 4 rounds at a time, leaving space between them, and fry for 3 minutes on the first side. Turn once and fry 2 to 3 minutes more until both sides are golden and crisp, keeping the oil near 350 F so the tomatoes brown before they soften.

Look for: The coating is deep golden and crisp while the tomato center is tender but not collapsed.

  7. Finish the remaining rounds

Transfer each finished batch to a wire rack set over a sheet pan, never a paper-towel-lined plate. Let the oil return to about 350 F between batches, then fry the remaining rounds in the same 3-to-4-round batches without stacking them.

Look for: The rack lets air circulate under each round and the crust stays dry.

  8. Serve while crisp

Serve the fried green tomatoes hot as soon as the last batch drains, with the tangy dip alongside if prepared. Keep the rounds in a single layer until they reach the table so trapped steam does not soften the cornmeal crust.

Look for: The outside crackles lightly and the center is tender without falling apart.
