Savory Miso Oatmeal with Sesame Mushrooms and Jammy Eggs

White miso enriches creamy rolled oats, topped with browned cremini mushrooms, jammy eggs, scallions, and toasted sesame.

This breakfast bowl borrows the savory depth of miso soup and pairs it with the comfort of oatmeal. The oats stay textured, the mushrooms brown separately, and the soft eggs make each serving substantial without losing its vegetarian character.

Keep the oats creamy, not pasty

Rolled oats need frequent stirring as they simmer so the bottom does not catch, but they should still retain visible flakes. Stirring the miso in after the pan leaves the heat preserves its rounded flavor and keeps the finished porridge from tasting harsh.

Time eggs for a soft center

Lower eggs into gently boiling water and start the timer right away for a seven-minute cook. Cooling them promptly in cold water stops carryover cooking, making the shells easier to remove while the yolks stay jammy.

Give mushrooms room to brown

A wide skillet and a little patience let mushroom moisture evaporate before the slices begin to color. Leave them undisturbed at first, then turn and season once the undersides are golden; finishing with sesame oil off heat protects its aroma.

Use vinegar as a finishing accent

Rice vinegar should sharpen the bowl rather than make it sour, so add only a small splash over each serving. Scallions and sesame seeds bring freshness and crunch that balance the creamy oats and rich yolk.

Bring the bowls together

Divide the oats while they are still loose, then mound the mushrooms so their browned surfaces remain visible. Halve the eggs at the last moment and finish each bowl with scallions, sesame, and vinegar for contrast in every bite.

Savory Miso Oatmeal with Sesame Mushrooms and Jammy Eggs

4 servings
30 minutes total

Ingredients

  • •  2 cups old-fashioned rolled oats
  • •  4 cups water
  • •  1/2 tsp kosher salt for oats
  • •  4 large eggs
  • •  1 lb cremini mushrooms, sliced
  • •  1 tbsp neutral oil
  • •  1/4 tsp kosher salt for mushrooms
  • •  1/2 tsp freshly ground black pepper
  • •  2 tbsp white miso
  • •  1 tbsp toasted sesame oil
  • •  4 scallions, thinly sliced
  • •  1 tbsp unseasoned rice vinegar
  • •  2 tsp toasted sesame seeds

Method

  1. Boil the eggs

Bring a saucepan of water to a steady boil, lower in the eggs with a spoon, and boil for exactly 7 minutes for jammy yolks; keep the water bubbling gently rather than letting the eggs knock against the pan.

Look for: The eggs cook for 7 minutes in gently bubbling water without cracking from a hard boil.

  2. Cool and peel the eggs

Transfer the eggs immediately to a bowl of cold tap water and cool for 5 minutes, refreshing the water once if it warms; gently crack and peel them while the oatmeal and mushrooms cook.

Look for: The shells release cleanly and the whites are set around soft, jammy centers.

  3. Simmer the oatmeal

In the same saucepan, bring the measured water and kosher salt for oats to a boil, stir in the rolled oats, then reduce to medium-low and simmer, stirring often, until creamy but still textured.

Look for: Oats are creamy and spoonable, with individual flakes still visible rather than dissolved.

  4. Stir in miso off heat

Remove the saucepan from the heat; whisk the white miso with a spoonful of hot oatmeal in a small bowl until smooth, then stir it back into the pot so the miso dissolves without boiling.

Look for: Miso is fully blended and the oatmeal stays creamy without simmering after it is added.

  5. Brown the mushrooms

While the oats simmer, heat neutral oil in a wide skillet over medium-high heat; add the sliced mushrooms in a single layer and leave them undisturbed until their undersides are deeply golden and most released moisture has evaporated.

Look for: Mushrooms have browned contact surfaces and the skillet is no longer wet with mushroom liquid.

  6. Season and finish the mushrooms

Turn the mushrooms, sprinkle with the salt for mushrooms and black pepper, and cook until tender and browned on both sides; remove the skillet from the heat and toss with toasted sesame oil and most of the sliced scallions.

Look for: Mushrooms are tender with browned edges, and sesame oil smells nutty but not scorched.

  7. Loosen and divide the oats

Stir the oatmeal to loosen it; if it has thickened while waiting, mix in a small splash of hot water until it is creamy again, then divide it among four warm bowls.

Look for: Each bowl holds creamy oats that settle softly rather than standing in a stiff mound.

  8. Top with mushrooms and eggs

Divide the sesame mushrooms among the bowls; halve each peeled egg lengthwise and place two halves over each serving, keeping the jammy yolks visible.

Look for: Each bowl has a generous mushroom topping and an egg half with a soft, glossy center.

  9. Finish with bright toppings

Sprinkle the remaining scallions and toasted sesame seeds over the bowls, then add a small splash of rice vinegar to each; serve at once while the mushrooms are hot and the egg centers remain soft.

Look for: Rice vinegar brightens the savory oats lightly without pooling in the bowl.
