Cheddar-Corn Breakfast Quesadillas
A one-skillet breakfast turns soft scrambled eggs, dry-cooked corn, scallions, and cheddar into crisp folded quesadillas that stay warm between batches.

These quesadillas balance a tender filling with a crisp tortilla, and a single skillet carries the corn, eggs, and final browning. Keeping the first batch on an uncovered rack in a low oven makes it easy to serve four warm without steaming the edges soft.
Start with hot, dry corn
Thawed corn can release water as it heats, so give it a brief turn in a dry skillet before the eggs go in. Wait until the surface moisture disappears and steam has faded; this keeps the filling flavorful instead of watery and gives the scallion whites a chance to soften.
Stop the eggs while glossy
Gentle heat and steady sweeping make soft curds that can finish warming inside the tortilla. Pull the pan off the heat while a slight sheen remains, then fold in the hot corn and cheddar so carryover heat does the last bit of work.

Fold loosely and cook steadily
Keep the filling on one side of each tortilla and leave an edge clear so the fold closes without pressure. A moderate skillet setting gives the outside time to turn crisp while the cheddar melts, and skipping the spatula press helps keep the filling from escaping.
Hold the first batch uncovered
A wire rack lets air move under the first quesadillas while the next pair browns, so the warm oven holds them without collecting steam underneath. Serve soon after slicing, with scallion greens and jarred salsa at the table for a fresh finish.

Cheddar-Corn Breakfast Quesadillas
Ingredients
- • 4 large (10-inch) flour tortillas
- • 8 large eggs
- • 1 1/2 cups shredded sharp cheddar cheese
- • 1 cup frozen corn, thawed and drained well
- • 3 scallions, white and green parts separated
- •
- • 3/4 tsp kosher salt
- • 1/4 tsp black pepper
- • 1/2 cup jarred salsa, optional for serving
Method
Set up a warm holding rack
Heat the oven to 200 F and set a wire rack over a rimmed sheet pan; the rack will hold cooked quesadillas uncovered so their bottoms stay crisp.
Look for: The oven is warm and the wire rack sits level over the sheet pan.
Cook the corn dry
Heat the thawed, drained corn in a dry skillet over medium, stirring for 2–3 minutes until hot and no visible moisture or steam remains; add the scallions' white parts for the final 30 seconds, then transfer everything to a bowl.
Look for: The corn is hot, the skillet surface looks dry, and the scallion whites smell sweet rather than raw.
Season the eggs
Whisk the eggs with kosher salt and black pepper until the yolks and whites are fully blended; keep the scallions' green parts aside for serving.
Look for: The egg mixture is even in color with no separate streaks of white.
Scramble gently
Over medium-low heat, melt 1 tbsp butter in the same skillet (or, if choosing neutral oil, add 1 tbsp neutral oil); pour in the eggs and gently sweep a flexible spatula through them until glossy soft curds form, about 2 minutes, then remove from heat. Keep the remaining 1 tbsp butter or neutral oil for cooking the quesadillas.
Look for: The curds are soft and glossy, with a little uncooked sheen between them; no browned edges have formed.
Fold in corn and cheese
Fold the hot corn, scallion whites, and 1/2 cup cheddar into the eggs off heat; stop as soon as they are combined so carryover heat does not firm the eggs, then return the filling to the bowl.
Look for: Corn and cheese are distributed through the eggs, which remain tender rather than set into firm curds.
Fill and fold the tortillas
Divide the egg filling among the four tortillas, placing it on one half and keeping a narrow border clear; scatter 1/4 cup of the remaining cheddar over each portion, fold the tortillas over, and do not pack them full.
Look for: Each folded tortilla closes without pressure and has an unfilled edge to help keep the filling inside.
Crisp in batches
Warm a thin film of the remaining butter or neutral oil in the skillet over medium-low; cook the first pair of folded tortillas for 2–3 minutes per side, turning once, until crisp and the cheese melts. Move them to the uncovered rack in the warm oven, then cook the remaining pair, adding a little reserved fat only if the skillet looks dry; do not press down, which can squeeze out the filling.
Look for: The tortilla faces are golden and crisp, cheese at the seam has melted, and the filling stays inside when turned.
Slice and serve
Remove the quesadillas from the rack, cut them into wedges, and garnish with scallion greens. Serve jarred salsa alongside if desired, keeping the wedges in a single layer until they reach the table to preserve crisp edges.
Look for: The cut faces show soft egg, corn, and melted cheddar, and the tortillas remain crisp at the edges.
