No-Churn Vanilla Ice Cream
Cold cream and sweetened condensed milk create a smooth, scoopable vanilla ice cream with no machine and only a few minutes of active work.

This simple freezer dessert depends on two textures: whipped cream supplies the air, while condensed milk keeps the base sweet and rich. Vanilla bean seeds add a classic speckled finish, and a small pinch of salt sharpens the flavor.
A gentle fold protects the cream's volume, so the finished mixture freezes into a soft, creamy scoop rather than a dense block.
Build flavor before folding
Mix the condensed milk with vanilla extract, scraped bean seeds, and salt first. The base is thick, so whisk until the seeds are distributed before adding cream; that keeps the flavor even without deflating the whipped mixture.
Stop at firm, smooth peaks
Cold cream whips quickly, so watch its shape as it thickens. Firm peaks stand when the whisk lifts, but the cream should still look satin-smooth; if it begins to look grainy, it has gone too far for an easy fold.

Fold without pressing out the air
The first quarter of cream loosens the dense base and makes the rest easier to incorporate. Use a broad spatula to cut down through the center, sweep along the bottom, and turn the mixture over itself; stop once it is nearly uniform.
Freeze it level and covered
A chilled pan gives the mixture a head start, and a level freezer shelf helps it set evenly. Parchment pressed against the surface limits exposed air, while a tight lid or foil cover protects the clean vanilla flavor from freezer odors.

Give each scoop a short temper
After at least six hours, the center should be firm while the ice cream remains easy to scoop after a brief five-minute rest on the counter. Chilled bowls slow melting, and returning the container promptly to the freezer helps preserve the smooth surface for the next serving.
No-Churn Vanilla Ice Cream
Ingredients
- • 2 cups cold heavy cream
- • 1 (14 oz) can sweetened condensed milk
- • 1 tbsp pure vanilla extract
- • 1 vanilla bean, split lengthwise
- • 1/8 tsp fine salt
Method
Chill the container
Place a 9-by-5-inch loaf pan or freezer-safe container in the freezer while you prepare the base so the mixture begins freezing as soon as it is spread in the pan.
Look for: The container is cold to the touch when you are ready to fill it.
Flavor the condensed milk
Scrape the seeds from the split vanilla bean into a large bowl, then whisk in the condensed milk, vanilla extract, and salt until the mixture is smooth and the seeds are dispersed.
Look for: The vanilla seeds are evenly scattered through the glossy condensed milk.
Whip the cream
In a separate chilled bowl, beat the cold heavy cream with a mixer on medium-high until it holds firm peaks; stop as soon as the peaks stand without looking grainy or clumpy.
Look for: A lifted whisk leaves a firm peak whose tip bends slightly, and the cream still looks smooth.
Lighten the base
Fold about one quarter of the whipped cream into the condensed-milk mixture with a wide spatula until no thick streaks remain; this loosens the base for the remaining cream.
Look for: The base is lighter and flows from the spatula while still holding some air.
Fold in the cream
Add the remaining whipped cream in two additions, folding gently from the bottom over the top and rotating the bowl until only a few pale streaks remain; avoid stirring or pressing out the air.
Look for: The mixture is evenly pale with no pockets of condensed milk and still looks fluffy.
Fill and cover
Scrape the mixture into the chilled pan and smooth the top without packing it down, then press a sheet of parchment against the surface and cover the pan tightly with foil or its lid.
Look for: The surface is level, protected by parchment, and sealed from freezer odors.
Freeze until scoopable
Freeze the covered pan on a level shelf for at least 6 hours, until the center is firm enough to hold a scoop; for the cleanest slices, leave it overnight.
Look for: The center feels firm beneath the surface and a scoop draws a smooth curl.
Temper and serve
Let the pan stand at room temperature for 5 minutes, then scoop into chilled bowls; return the covered container to the freezer promptly after serving.
Look for: The ice cream yields to the scoop but keeps its shape in the bowl.
