Ham Steak and Eggs
A quick diner-style plate pairs browned center-cut ham with eggs cooked to order in the same lightly buttered skillet.

Ingredients
12 oz center-cut ham steak
1 tbsp unsalted butter
2 large eggs
2 tbsp water
1/8 tsp freshly ground black pepper
2 slices sturdy bread, optional for toast
Equipment
Large skillet · Skillet lid · Thin spatula · Paper towels · Toaster, optional
Prepare the plate
01. Set plates by the stove and start optional toast so it is warm when the eggs are done.
02. Blot the ham dry and season lightly with pepper; its cured seasoning means extra salt is unnecessary.
Brown the ham
03. Melt butter over medium heat and add the ham once it foams without smoking.
04. Sear about 3 minutes per side until hot through and bronzed around the edges.
Cook the eggs
05. Plate the ham, lower the heat, and keep the optional toast warm while the eggs cook in the same pan.
06. Add eggs and water, cover, and cook 2 to 3 minutes for runny yolks or 4 to 5 minutes for firm yolks.
Serve while warm
07. Set one egg beside each ham portion and serve promptly with toast or breakfast potatoes if desired.
