Ham Steak and Eggs

20 min · 2 servings

Ingredients

□ 12 oz center-cut ham steak

□ 1 tbsp unsalted butter

□ 2 large eggs

□ 2 tbsp water

□ 1/8 tsp freshly ground black pepper

□ 2 slices sturdy bread, optional for toast

Directions

1. Set plates and optional toast nearby. Blot ham dry and pepper lightly; skip extra salt.

2. Foam butter over medium heat, then sear ham about 3 minutes per side until hot and browned.

3. Move ham to plates. Lower heat, add eggs and water, cover, and cook to the yolk texture you like.

4. Serve one egg with each ham portion, with warm toast or breakfast potatoes if desired.

Cook’s note: Keep the heat moderate so the butter and ham drippings flavor the eggs without scorching.
