Greek-Style Chicken and Chickpea Bowls

A bright, protein-forward bowl dinner that leans on smart grocery shortcuts and one skillet for a genuinely quick weeknight meal.
Four Greek-style bowls hold sliced chicken, brown rice, chickpeas, greens, tomatoes, cucumber, and hummus.

This Greek-style bowl is built around a useful contrast: warm, seared chicken and grains meet cool greens, chickpeas, tomato, cucumber, and hummus. A lemon-herb dressing mixed in the serving bowl makes the salad and keeps the cleanup focused on a skillet, bowl, and board.

Start with the right shortcuts

Thin chicken cutlets or tenders sear quickly, while canned chickpeas and prewashed greens eliminate the slowest prep tasks. Microwaveable grains make a warm base without adding a pot or extending the meal beyond a busy evening window.

Let one bowl do double duty

Whisk the lemon-herb dressing directly in the large serving bowl, then add the vegetables and greens to it. The dressing is distributed evenly as you toss, and any last spoonful becomes a useful finish for the assembled bowls.

Keep the knife work brief

Halve cherry tomatoes and slice the cucumber over the same bowl holding the dressing, using a single board only for the cooked chicken. If your market carries snack cucumbers or pre-cut vegetables, they make the assembly even more direct.

Build each bowl to order

Start with warm grains, then add the dressed greens and chickpeas so the temperature contrast remains appealing. Finish with sliced chicken and hummus, leaving the hummus in a generous dollop instead of stirring it through the salad.

Sliced chicken, hummus, chickpeas, cucumber, tomatoes, greens, and brown rice fill a finished bowl.

Greek-Style Chicken and Chickpea Bowls

4 servings
20 minutes total

Ingredients

  • •  1 1/4 lb chicken tenders or thin chicken cutlets
  • •  1 (15 oz) can canned chickpeas
  • •
  • •  1 pint cherry tomatoes, halved
  • •  1 Persian cucumber, thinly sliced
  • •  1/2 cup store-bought hummus
  • •  2 (8.5 oz) pouches microwaveable brown rice or grains
  • •  2 tbsp extra-virgin olive oil
  • •  1 tsp kosher salt
  • •  1/2 tsp black pepper
  • •  1 lemon
  • •  1 tsp dried oregano

Method

  1. Mix the dressing

In a large serving bowl, whisk the juice of the lemon with 1 tbsp olive oil, the dried oregano, 1/2 tsp salt, and 1/4 tsp pepper to make the lemon-herb dressing. Use spinach by default; use spring greens when unavailable.

Look for: The dressing looks lightly emulsified and smells bright with lemon and oregano.

  2. Season the chicken

Pat the chicken tenders or thin cutlets dry and season both sides with the remaining 1/2 tsp salt and 1/4 tsp pepper.

Look for: The chicken has an even, light coating of salt and pepper.

  3. Cook the chicken

Heat the remaining 1 tbsp olive oil in a large skillet over medium-high heat, then cook the chicken for 3 to 4 minutes per side until browned and 165 F at its thickest point.

Look for: The chicken is browned in spots and registers 165 F in the thickest piece.

  4. Prep the produce

While the chicken cooks, drain and rinse the chickpeas, halve the cherry tomatoes, and thinly slice the cucumber directly over the serving bowl to minimize chopping and dishes.

Look for: The tomatoes, cucumber, and chickpeas are collected in the bowl with the dressing.

  5. Dress the greens

Add the bagged greens to the serving bowl and toss with the chickpeas, tomatoes, cucumber, and lemon-herb dressing until the leaves are lightly coated.

Look for: The greens glisten lightly without pooling dressing at the bottom of the bowl.

  6. Warm the grains

Microwave the brown rice or grain pouches according to their package directions while the chicken finishes cooking.

Look for: The grains are hot and separate easily when squeezed through the unopened pouch.

  7. Slice the chicken

Transfer the cooked chicken to a board, rest it for 2 minutes, and slice it across the grain into bite-size pieces.

Look for: The sliced chicken is juicy inside with no pink center.

  8. Build the bowls

Divide the warm grains, dressed greens and chickpeas, sliced chicken, and hummus among four bowls; spoon any dressing left in the serving bowl over the top.

Look for: Each bowl has warm grains, cool dressed vegetables, chicken, and a visible spoonful of hummus.
