Blackened Cajun Chicken with Skillet Corn
A dark, aromatic spice crust and sweet lemony corn make a quick skillet supper with clear heat and doneness cues.

Blackening depends on a dry surface, an intensely hot pan, and enough space for the chicken to sear instead of steam. Sweet corn cooked in the same skillet catches the browned spices and brings a fresh counterpoint to the cayenne.
Build an even spice coat
Paprika gives the blend its color while cayenne brings direct heat; thyme, garlic, and black pepper round it out. Dry the chicken before seasoning so the spices cling in a thin layer and brown rather than turn pasty.
Start with a dry surface
Patting the chicken dry is a small step with a clear payoff: moisture on the surface delays browning. Let the seasoned breasts wait only while the cast iron heats, then add them in a single layer so the pan stays hot.

Sear with ventilation
The first side should cook undisturbed long enough to form a dark crust. Keep a hood running or a window open because hot spices can smoke, and reduce the heat after turning so the centers reach temperature without scorching the coating.
Use temperature, not color
A dark exterior is the goal, but it cannot tell you whether the center is cooked. Check the thickest part of each breast with an instant-read thermometer and remove it at 165 F, then give the meat five minutes to rest.

Let the corn catch the pan flavor
After the chicken rests, corn cooks quickly in the same skillet and loosens its browned spice bits. Scallions and butter soften briefly, while lemon and parsley go in off heat to keep the relish vivid.
Serve while the corn is warm
Slice the chicken across the grain for tender bites and spoon the corn alongside rather than over the crust. A generous portion of lemony kernels gives each serving sweetness and acidity against the smoky seasoning.
Blackened Cajun Chicken with Skillet Corn
Ingredients
- • 4 boneless, skinless chicken breasts, about 6 oz each
- • 2 tsp smoked paprika
- • 1 tsp cayenne pepper
- • 1 tsp garlic powder
- • 1 tsp dried thyme
- • 1 tsp freshly ground black pepper
- • 1 tsp kosher salt
- • 2 tbsp neutral high-heat oil, divided
- • 4 ears fresh corn, kernels cut from cobs
- • 3 scallions, thinly sliced
- • 1 tbsp unsalted butter
- • 1 medium lemon
- • 2 tbsp chopped fresh flat-leaf parsley
Method
Mix the Cajun seasoning
Stir paprika, cayenne, garlic powder, thyme, black pepper, and salt in a small bowl until the spices are evenly combined.
Look for: The blend is uniformly red with no clumps of garlic powder.
Dry and season the chicken
Pat chicken breasts thoroughly dry, then coat every side with the spice blend, pressing it onto the surface so it adheres. Let stand while the skillet heats.
Look for: The surface is dry and evenly covered with a thin red coating.
Heat the skillet and ventilate
Open a window or turn on the range hood, then heat a large cast-iron skillet over high heat until a drop of water skitters away quickly. Keep the hood running during searing.
Look for: The skillet is very hot and the cooking area is ventilated before the chicken goes in.
Sear the first side
Add 1 tablespoon oil and swirl to coat the skillet. Lay the chicken in a single layer without crowding and sear undisturbed for 5 minutes, until a dark crust forms.
Look for: The spice crust is dark mahogany at the edges and releases from the pan when lifted.
Cook through gently
Turn the chicken, reduce heat to medium, and cook 4 to 7 minutes more depending on thickness, turning once if needed, until the thickest center reaches 165 F on an instant-read thermometer.
Look for: The center of each breast registers 165 F without relying on color alone.
Rest the chicken
Transfer the chicken to a clean plate and rest for 5 minutes. Leave the browned fond in the skillet; lower the heat to medium for the corn.
Look for: The chicken rests undisturbed and the skillet is no longer at searing heat.
Sauté the corn
Add the remaining 1 tablespoon oil and corn kernels to the skillet. Cook, stirring occasionally, for 4 minutes until some kernels take on golden spots but remain juicy.
Look for: A few kernels are lightly browned and the rest remain plump.
Make the bright relish
Stir in scallions and butter and cook 1 minute, scraping up the browned spice bits. Remove from heat, squeeze in the lemon juice, and fold in parsley.
Look for: Butter coats the kernels and lemon brightens the smoky aroma without cooking away.
Slice and serve
Slice the rested chicken across the grain and arrange it with the warm corn relish. Spoon any clean resting juices over the chicken and serve promptly.
Look for: The chicken slices are juicy and the corn is glossy with scallion and lemon.
