Garlic Butter Roasted Asparagus
20 min · 4 servings
Ingredients
□ 1 1/2 lb medium-thick asparagus spears
□ 1 tbsp olive oil
□ 3/4 tsp kosher salt
□ 2 tbsp unsalted butter
□ 2 garlic cloves, finely grated
□ 1 small lemon
□ 1/4 tsp freshly ground black pepper
Directions
1. Heat oven to 450 F. Choose evenly sized spears, rinse and dry well, then snap off woody ends while keeping them whole.
2. Coat with 1 tbsp oil and 3/4 tsp salt; leave gaps on the pan. Roast at 450 F for 9 to 10 min, until tips brown and stalks stay firm.
3. Melt butter on low, stir in garlic until fragrant, then gently toss the hot asparagus in the garlic butter.
4. Add lemon zest, juice, and black pepper. Plate the whole spears and serve promptly; allow about 2 min from oven to table.
Cook’s note: Leave space between spears so high heat browns their tips instead of steaming them.
