Garlic Butter Roasted Asparagus

High heat browns the asparagus tips while leaving the stalks lively, and a quick toss in garlic butter, lemon, and pepper finishes the side.
Whole roasted asparagus spears glisten with garlic butter, lemon zest, and black pepper, with lightly browned tips.

This side depends on dry spears and open space on the pan: both let the tips brown before the stalks lose their gentle bite. Garlic butter goes on after roasting, so its aroma stays fresh instead of scorching in the hot oven.

Choose spears that roast evenly

Medium-thick asparagus gives the tips time to color while the stalks turn tender, and evenly sized bunches finish together. Snap away only the dry, woody ends, then dry the rinsed spears well so surface water does not create steam.

Use the pan as a roasting surface

A single layer with visible gaps allows hot air to reach the stalks and the sheet pan to brown the tips. At 450 F, begin checking at 9 minutes; take the pan out when the spears bend slightly but still resist, since carryover heat continues to soften them.

Dry asparagus spears lie in a spaced single layer on a rimmed sheet pan before roasting.
Whole asparagus spears sit in a spaced layer on the sheet pan, ready for high-heat roasting.

Keep the garlic butter gentle

Melt the butter over low heat and stir in the grated garlic only until it smells fragrant. Keeping the garlic pale avoids a bitter edge, while tossing the butter with the hot spears after roasting preserves its rich aroma.

Finish bright and serve promptly

Lemon zest, juice, and black pepper balance the butter without hiding the asparagus. Arrange the intact spears on a warm platter and bring them to the table as soon as they are coated, while the tips are browned and the centers remain tender-crisp.

Lightly browned asparagus tips show a tender-crisp texture beneath garlic butter and flecks of lemon zest.

Garlic Butter Roasted Asparagus

4 servings
20 minutes total

Ingredients

  • •  1 1/2 lb medium-thick asparagus spears
  • •  1 tbsp olive oil
  • •  3/4 tsp kosher salt
  • •  2 tbsp unsalted butter
  • •  2 garlic cloves, finely grated
  • •  1 small lemon
  • •  1/4 tsp freshly ground black pepper

Method

  1. Heat the oven

Set a rack in the upper third and heat the oven to 450 F; give it time to reach the full temperature before the asparagus goes in.

Look for: The oven has fully preheated to 450 F.

  2. Choose and trim the spears

Choose firm, evenly sized medium-thick asparagus spears, rinse and dry them thoroughly, then snap off the pale, woody ends; keep every spear whole.

Look for: The trimmed ends look moist and green rather than fibrous, and the spears are fully dry.

  3. Season in one layer

Lay the whole asparagus on a rimmed sheet pan, drizzle with the olive oil, sprinkle with kosher salt, and roll gently to coat; leave clear gaps between spears.

Look for: Each spear has a light sheen, with no overlapping or crowded patches.

  4. Roast until just tender

Roast at 450 F for 9 to 10 minutes, without turning, until the tips are lightly browned and a thick spear bends slightly but still offers a little resistance.

Look for: Tips show light brown spots and the stalks remain vivid green and gently firm.

  5. Make the garlic butter

While the asparagus roasts, melt the unsalted butter in a small skillet over low heat, add the grated garlic, and stir for about 30 seconds until fragrant but not browned.

Look for: The butter is melted and the garlic smells fragrant while remaining pale.

  6. Toss while hot

Remove the pan as soon as the asparagus reaches the tender-crisp cue, pour the garlic butter over the spears, and use tongs to turn them gently without breaking them.

Look for: The warm butter coats the spears evenly and the stalks stay intact.

  7. Add lemon and pepper

Finely zest the lemon over the asparagus, squeeze its juice across the spears, add the black pepper, and roll them gently once more to distribute the finish.

Look for: Lemon zest is visible across the glossy spears and the pepper is evenly scattered.

  8. Plate and serve

Arrange the spears on a warm platter and serve straight away; with the butter ready during roasting, the oven-to-table finish takes about 2 minutes.

Look for: The asparagus reaches the table hot, before the browned tips soften.
