Fried Mozzarella Sticks with Marinara
A double panko crust, a short freeze, and measured batches deliver the familiar contrast of crisp coating and molten mozzarella.

Fried mozzarella sticks are a familiar shareable appetizer, and the best ones hold together long enough to reach the dipping sauce. Low-moisture mozzarella, a second panko coat, and a brief freeze create a dependable crust around the melting center.
The frying is quick, so have the marinara warm and the wire rack ready before the first batch goes into the pot. A thermometer keeps the oil steady while the sticks turn golden.
Choose cheese that holds its shape
Low-moisture mozzarella is firm enough to cut into even sticks and has less water to drive out as it heats. Keeping the cut cheese chilled until it is breaded also makes it easier to handle without softening the coating station.
Build a sealed panko shell
The flour gives the egg wash a dry surface to cling to, and the second pass through egg and panko reinforces the seams. Press crumbs onto the ends as carefully as the sides, since gaps there let the cheese escape first.

Use the freezer as a short reset
A short freeze firms the coating and cools the cheese without requiring a long make-ahead schedule. Space the sticks apart on the tray so the crumb shell stays intact when you lift them into the pot.
Fry just until the crumbs turn gold
At 350 F, the panko browns quickly while the cheese softens inside. Small batches preserve that heat, and lifting a leaking stick at once keeps loose cheese from sticking to the pot.

Serve while the center is molten
A wire rack keeps air moving around the hot crust while a brief rest lets the center settle enough for dipping. Serve the sticks immediately with warm marinara, and let the oil cool completely in its pot before moving it.
Fried Mozzarella Sticks with Marinara
Ingredients
- • 16 oz low-moisture whole-milk mozzarella block
- • 1 cup all-purpose flour
- • 1 tsp kosher salt
- • 1/2 tsp garlic powder
- • 1/2 tsp dried Italian seasoning
- • 1/4 tsp freshly ground black pepper
- • 2 large eggs
- • 1 tbsp water
- • 2 cups panko breadcrumbs
- • 4 to 6 cups neutral high-heat oil, as needed for 1 1/2 to 2 inches in the pot
- • 1 1/2 cups marinara sauce
Method
Cut the mozzarella
Cut the mozzarella block into 12 sturdy sticks about 3 inches long and 1/2 inch square; arrange them on a parchment-lined tray and keep chilled while setting up the coating station.
Look for: The cheese sticks are even in size so they heat at the same rate during frying.
Set up the breading station
Put flour in one shallow dish; whisk salt, garlic powder, Italian seasoning, and pepper into it. Beat the eggs with water in a second dish and place panko in a third dish, keeping one hand for dry coating and one for egg.
Look for: The three dishes are arranged in order and the egg wash is smooth with no visible streaks of yolk.
Bread and seal the sticks
Coat each chilled cheese stick in seasoned flour and shake off excess, dip it in egg, then press into panko; dip it in egg once more and coat again with panko, pressing crumbs over the ends and seams.
Look for: Every stick has a complete crumb layer, especially at its ends, with no bare cheese showing.
Freeze the breaded sticks
Space the breaded sticks apart on the lined tray and freeze for 30 minutes; this brief chill firms the coating so it stays intact when the cheese starts to melt.
Look for: The coating feels firm and dry to the touch but the sticks are not required to freeze solid.
Warm the marinara and heat oil
Warm the marinara in a small saucepan over low heat, stirring occasionally. Add 1 1/2 to 2 inches of oil to a heavy pot, keep the pot no more than halfway full, attach a thermometer, and heat to 350 F over medium heat.
Look for: The sauce is warm without simmering hard and the oil holds near 350 F without smoking.
Fry in small batches
Lower 3 or 4 frozen sticks carefully into the oil and fry for 1 to 2 minutes, turning once, until the panko is deep golden; let the oil return to 350 F between batches and lift any stick that begins leaking cheese immediately.
Look for: The crumb coating is crisp and golden, and the sticks come out before the cheese can escape.
Drain briefly on a rack
Transfer the sticks with a spider or tongs to a wire rack set over a sheet pan and rest for about 1 minute; the rack lets oil drain away while the cheese settles inside the crust.
Look for: The crust stays dry on the underside and the center is molten but not running out.
Serve with warm marinara
Turn off the burner, arrange the mozzarella sticks on a warm platter, and serve immediately with warm marinara for dipping; leave the pot undisturbed until the oil cools completely and never add water to hot oil.
Look for: The cheese is soft inside its crisp shell and the marinara is warm and ready for dipping.
