Espagnole Sauce
A reduced-volume home method builds classical espagnole from brown stock, evenly browned mirepoix, tomato paste, herbs, and a patiently cooked roux, then simmers and strains it smooth.

Ingredients
4 cups unsalted brown veal or beef stock
1 tbsp neutral oil
1/2 cup finely diced yellow onion
1/4 cup finely diced carrot
1/4 cup finely diced celery
1 tbsp tomato paste
4 tbsp unsalted butter
4 tbsp all-purpose flour
1 small bay leaf
3 fresh thyme sprigs
4 parsley stems
6 whole black peppercorns
1/2 tsp kosher salt, or to taste
Equipment
Heavy skillet · Heavy saucepan · Whisk · Fine-mesh strainer · Cheesecloth or tea infuser
Brown the flavor base
01. Warm the brown stock until steaming so it blends smoothly into the roux.
02. Brown the diced onion, carrot, and celery for 10 to 12 minutes, turning the heat down if edges blacken.
03. Cook the tomato paste for 1 to 2 minutes, until brick red, then deglaze with 1/2 cup warm stock and scrape up the skillet fond while it is still easy to release.
Make and combine the roux
04. Stir butter and flour over medium-low heat for 18 to 20 minutes; aim for a milk-chocolate color and nutty smell, and reduce the heat at the first wisp of smoke.
05. Whisk in the warm stock a little at a time, smoothing each addition before the next, then add the browned vegetables and their deglazing liquid.
Simmer and strain
06. Add the secured herbs and peppercorns; keep the sauce at a gentle bubble for 75 minutes, skimming every 10 to 15 minutes so surface fat and foam do not cloud it.
07. Strain without pressing the solids, season to taste, and simmer briefly if needed for a spoon-coating finish.
08. Cool in a shallow container before covering for refrigeration.
