Chocolate Mousse
210 min · 6 servings
Ingredients
□ 8 oz bittersweet chocolate (60–70% cacao), finely chopped
□ 1/2 cup heavy cream, for warming
□ 1 1/2 cups heavy cream, cold
□
□ 2 tbsp granulated sugar
□ 1 tsp vanilla extract
□ 1/8 tsp fine salt
□ 1 oz bittersweet chocolate, shaved for garnish
Directions
1. Chop chocolate. Warm cream with sugar and salt until steaming, then pour over chocolate.
2. Rest 2 minutes, stir smooth, add vanilla, and cool until barely warm. Whip cold cream to soft peaks.
3. Whip pasteurized egg whites or extra cream for an egg-free version; fold the chosen lift into the chocolate cream.
4. Fill 6 glasses and chill at least 180 minutes, until softly set. Finish with shaved chocolate.
Cook’s note: Fold gently once the cream is added; a few broad strokes preserve the mousse's airy texture.
