Chocolate Mousse

A smooth bittersweet chocolate base folded with soft whipped cream sets into a light dessert for six.
Six glasses of airy bittersweet chocolate mousse are topped with fine chocolate shavings.

This mousse gets its structure from a cool chocolate base and softly whipped dairy, with pasteurized egg whites adding extra lift in the classic version. An egg-free branch folds in additional whipped cream for a gentler, creamier set.

Let the chocolate lead

Bittersweet chocolate gives the mousse its depth, while warm cream turns it into a smooth base that can accept air without breaking. A small amount of salt keeps the chocolate flavor rounded rather than flat.

Cool the base before folding

After the hot cream melts the chopped chocolate, let the mixture cool until barely warm. If it is still hot, it can soften the whipped cream and erase the light texture the folding is meant to preserve.

Choose one source of lift

The preferred method folds in foam made from pasteurized egg whites, which adds a light, delicate finish. For an egg-free version, whip the extra cream separately and fold it in instead; the two branches are alternatives, so prepare only one.

Use broad, gentle strokes

First loosen the chocolate with part of the whipped cream, then fold in the rest and the selected foam. Scrape the bottom of the bowl as you turn the mixture so no dense chocolate remains hidden underneath.

Serve after a patient chill

Divide the mousse into individual glasses before chilling so each portion sets evenly and is ready to serve. Wait until the centers hold a soft spoonable shape, then add shaved chocolate just before bringing them to the table.

Chocolate Mousse

6 servings
210 minutes total

Ingredients

  • •  8 oz bittersweet chocolate (60–70% cacao), finely chopped
  • •  1/2 cup heavy cream, for warming
  • •  1 1/2 cups heavy cream, cold
  • •
  • •  2 tbsp granulated sugar
  • •  1 tsp vanilla extract
  • •  1/8 tsp fine salt
  • •  1 oz bittersweet chocolate, shaved for garnish

Method

  1. Prepare the chocolate

Finely chop the bittersweet chocolate and place it in a medium heatproof bowl so the warm cream can melt it evenly.

Look for: The pieces are small and similar in size, with no large chunks left.

  2. Warm the cream

Combine the warming cream, granulated sugar, and fine salt in a small saucepan over medium-low heat; stir until the sugar dissolves and the cream steams, but do not let it boil.

Look for: The cream gives off steady wisps of steam and no bubbles break across the surface.

  3. Make and cool the chocolate base

Pour the hot cream over the chopped chocolate and leave it undisturbed for 2 minutes, then stir from the center until glossy and smooth; stir in vanilla and let the base cool until barely warm to the touch.

Look for: The chocolate base is shiny with no visible pieces, and it feels barely warm rather than hot.

  4. Whip the cream

In a chilled bowl, whip the cold heavy cream to soft peaks that bend over when the beaters lift; stop before it looks grainy or stiff.

Look for: The cream holds a soft ridge but the tip curls gently instead of standing straight.

  5. Prepare the lift

For the preferred version, beat the pasteurized egg whites in a clean bowl to soft peaks. For the egg-free option, whip the extra cold cream in a separate bowl to soft peaks instead; use only one branch.

Look for: The selected foam is airy and forms a soft peak whose tip folds over.

  6. Fold the mousse

Fold about one-third of the main whipped cream into the barely warm chocolate base to loosen it, then gently fold in the rest. Fold in the egg-white foam, or the egg-free extra whipped cream, until no streaks remain and the mixture is still airy.

Look for: The mixture is evenly colored and light, with no white streaks or deflated liquid at the bottom.

  7. Chill until set

Divide the mousse among 6 serving glasses, cover, and refrigerate for at least 180 minutes, until the centers hold a soft spoonable shape.

Look for: The surface looks set and a spoon leaves a soft track instead of a runny pool.

  8. Garnish and serve

Shave the bittersweet chocolate over the chilled mousse just before serving so the curls stay distinct and the tops remain neat.

Look for: Fine chocolate curls sit loosely on the mousse without melting into the surface.
