Cheese Omelet
A soft diner-style cheese omelet relies on gentle pan heat, a mostly set but glossy surface, and residual heat to finish sharp cheddar without browning or rubbery eggs.

Ingredients
3 large eggs
1 tbsp unsalted butter
1/2 cup (2 oz) finely shredded sharp cheddar cheese
1/8 tsp kosher salt
1/8 tsp freshly ground black pepper
Equipment
Small nonstick skillet · Mixing bowl · Whisk · Flexible spatula
Whisk and warm
01. Whisk the eggs with salt and pepper only until no clear white streaks remain; a little volume is fine, but foam makes the curd less tender.
02. Set the shredded cheddar beside the stove and warm the small nonstick skillet over medium-low; it should be evenly warm, never smoking.
Cook gently
03. Melt the butter and pour in the eggs. Draw set edges toward the center and tilt the skillet so loose egg fills the openings; stop when the top is mostly set but glossy.
04. Scatter the cheddar over one half while the surface remains moist, then let it soften briefly before folding.
Fold and serve
05. Fold into a soft half-moon and turn off the heat; residual warmth melts the cheddar while the eggs finish gently.
06. Slide onto a plate and serve promptly with toast or breakfast potatoes, while the omelet is warm and tender.
