Crisp Green Beans with Bacon and Onions

43 min · 4 servings

Ingredients

□ 1 lb green beans, trimmed

□ 4 oz thick-cut bacon

□ 1 large yellow onion, thinly sliced

□ 1 tbsp unsalted butter

□ 1/2 tsp kosher salt, divided

□ 1/4 tsp freshly ground black pepper

□ 2 tbsp apple cider vinegar

□ 2 tbsp water

□ 1 tbsp chopped fresh parsley

Directions

1. Blanch beans 3 minutes until bright and crisp-tender; drain, spread out, and dry.

2. Crisp bacon in a skillet, then drain it and leave only 1 1/2 tbsp fat behind.

3. Cook onions with butter over medium-low until lightly caramelized. Deglaze with cider vinegar and water.

4. Toss beans in the skillet just to warm. Fold in bacon and parsley, then serve immediately.

Cook’s note: Dry beans and a brief final toss keep their texture snappy instead of soft.
