Breakfast Tacos

Warm corn tortillas carry cumin-lime beans, glossy eggs, and cool fresh toppings in a quick, hand-held brunch.
Four small corn tortillas hold soft scrambled eggs, cumin beans, pico de gallo, cotija, and avocado beside mild salsa.

These tacos keep the hot and fresh parts distinct: cumin-lime beans and soft eggs go into warm tortillas, while pico, cotija, and avocado stay bright on top. A compact filling and a salsa choice at the table make them easy to eat by hand and simple to adjust for different heat preferences.

Build flavor in the skillet

The beans warm first with cumin and olive oil, then lime brings a clean finish without making them saucy. A covered bowl holds their heat while the same skillet is used for tortillas and eggs.

A low flame and slow stirring give the eggs tender curds. Taking the pan off the burner while they still shine lets carryover heat finish them without pushing them toward dryness.

Keep the tortillas pliable

A dry skillet warms corn tortillas quickly and brings out a few toasted freckles while leaving them flexible. Stacking them under a clean towel keeps the edges from cooling and cracking before assembly. Bring the covered stack to the filling station just before you start building tacos.

Assemble for easy eating

Keep the filling in a narrow strip below the tortilla's center and leave a clean edge to hold. Modest spoonfuls of pico and cotija with a little avocado add texture without making the tacos difficult to lift.

The salsa is a separate heat choice: keep the mild version for a gentle plate, or replace it with the medium or hot branch. Passing it at the table lets each person control both the amount and the warmth.

Avoid soggy or dry fillings

If the beans seem dry, stir them as they warm and use the lime at the end so their texture stays intact. If the eggs begin setting quickly, lower the heat and keep them moving; remove them while glossy because the pan's residual heat continues the cooking.

Breakfast Tacos

4 servings, two small tacos each
20 minutes total

Ingredients

  • •  8 small corn tortillas (6-inch)
  • •  8 large eggs
  • •  1 tbsp unsalted butter
  • •  1 tbsp olive oil
  • •  1 can (15 oz) black beans, drained and rinsed
  • •  1 tsp ground cumin
  • •  1/2 tsp kosher salt, divided
  • •  1 medium lime
  • •  1/2 cup pico de gallo
  • •  1/2 cup crumbled cotija cheese
  • •  1 medium ripe avocado
  • •

Method

  1. Prep the toppings

Drain and rinse the black beans, halve the lime, dice the avocado, and set out the pico de gallo and cotija; whisk the eggs until no streaks remain. Keep the toppings in separate bowls and leave the avocado until assembly so its cut surface stays bright.

Look for: The eggs are evenly blended and each fresh topping is ready in its own bowl.

  2. Warm the cumin beans

Skillet minute 0–4: warm the olive oil over medium-low, then add the black beans, cumin, and half the kosher salt. Stir until the beans are heated through, squeeze in half the lime, then transfer them to a bowl and loosely cover to keep warm.

Look for: The beans are hot throughout, lightly glossy, and fragrant with cumin rather than fried or dry.

  3. Warm the tortillas

Skillet minute 4–8: wipe away any bean residue and warm the corn tortillas in a dry skillet over medium, turning once in batches. Stack each flexible tortilla under a clean towel so it stays soft while the remaining ones warm.

Look for: The tortillas bend without cracking and show a few toasted freckles without turning crisp.

  4. Scramble the eggs gently

Skillet minute 8–12: lower the heat to low and melt the butter. Add the whisked eggs and remaining kosher salt, stir slowly until soft curds form, then pull the skillet off the heat while the eggs still look glossy so residual heat finishes them without drying them out.

Look for: The curds are tender and just set with no browned edges or pool of liquid.

  5. Choose the salsa heat

Set out the mild salsa for a gentle finish. For a medium option, replace it with 1/2 cup medium salsa; for a spicy option, replace it with 1/2 cup hot salsa, using one salsa branch only and spooning it on at serving.

Look for: Only the selected salsa is set out, keeping the other heat levels out of the filling.

  6. Fill compact tacos

Divide the beans and eggs evenly among the 8 warm tortillas, keeping the filling in a narrow band below the center. Add pico de gallo, cotija, and avocado in modest amounts, then squeeze the remaining lime over the avocado and leave a clear edge for easy hand-held eating.

Look for: Each tortilla has a compact filling strip and a clean border that can be held without squeezing out the toppings.

  7. Serve while warm

Arrange two tacos per serving and pass the selected salsa at the table, letting each person add only as much as they like. Serve promptly so the tortillas stay pliable, the eggs tender, and the pico de gallo fresh.

Look for: The tortillas are still warm and flexible, and the fresh toppings remain cool and distinct.
