Béchamel
A pale butter-and-flour roux turns warm milk into a smooth, spoon-coating French mother sauce, with optional onion, bay, and nutmeg for gentle aroma.

Ingredients
4 tbsp unsalted butter
4 tbsp all-purpose flour
3 cups whole milk
1 small yellow onion, peeled and halved, optional infusion
1 bay leaf, optional infusion
1/2 tsp kosher salt
1/8 tsp white pepper
1/8 tsp freshly grated nutmeg, optional
Equipment
Heavy saucepan · Small saucepan · Whisk · Fine-mesh strainer · Measuring cups and spoons
Warm the milk
01. Warm milk over medium-low until steam rises and tiny bubbles form at the edge. If using onion and bay, steep for 10 minutes, then strain them out.
02. Measure salt and white pepper before making the roux; keep the optional nutmeg close so seasoning is quick and controlled.
Make the roux
03. Melt butter over medium-low until its foam subsides, keeping it pale so the sauce retains its clean flavor.
04. Whisk in flour and cook about 3 minutes, stirring continuously; the roux should look smooth and pale ivory without toasted color.
Build and simmer the sauce
05. Reserve 1/4 cup warm milk for corrections. Whisk in the rest gradually, smoothing each addition before continuing so lumps do not form.
06. Simmer gently for 8 minutes over low heat, whisking the pan bottom and corners; small bubbles and a glossy surface signal steady heat.
Season and serve
07. Season with salt and white pepper, then add nutmeg if desired. Whisk briskly off heat to break up lumps, or strain if they persist.
08. Add reserved milk a tablespoon at a time if too thick; if thin, simmer gently until it thickens slightly, then serve when it coats a spoon.
