Za’atar Chicken with Bulgur Pilaf
Lemony za’atar chicken, herbed bulgur, toasted almonds, and crisp cucumber and tomato make a fresh weeknight supper with flexible grain timing.

Za’atar brings toasted herbs and sesame-like warmth to chicken, while lemon and garlic keep the seasoning bright. The bulgur cooks in stock as the chicken marinates briefly, then parsley, scallions, and almonds turn it into a substantial but fresh base.
Season beyond the surface
Lemon zest, juice, garlic, and za’atar make a quick coating that clings to the chicken and flavors its browned exterior. Let the pieces stand while the grain starts, then sear without crowding so they color instead of steam.
Cook the grain to its own timing
Bulgur is the default here: simmer it in chicken stock until tender and the liquid is absorbed. If bulgur is unavailable, quinoa needs a larger measure of stock and a longer covered simmer, while couscous only needs boiling stock poured over it and a short covered rest.

Fold in herbs at the end
Parsley, scallions, lemon, and toasted almonds go into the grain after it is tender, preserving their freshness and crunch. Use the same finish whichever grain you choose, but follow only that grain’s measured stock and cooking branch.
Keep the side crisp
Cucumber and tomato are best tossed shortly before the plates are ready, since salt draws out their moisture. A light coating of lemon and salt gives the vegetables a fresh contrast without turning the salad watery.

Za’atar Chicken with Bulgur Pilaf
Ingredients
- • 1 1/2 lb boneless, skinless chicken thighs
- •
- •
- • 2 medium lemons
- • 3 garlic cloves, finely grated
- • 2 tbsp olive oil, divided
- • 2 tbsp za’atar seasoning, divided
- • 1 1/4 tsp kosher salt, divided
- • 1/3 cup sliced almonds
- • 1/4 cup chopped fresh parsley
- • 3 scallions, thinly sliced
- • 1 medium cucumber, diced
- • 2 medium tomatoes, diced
- • 1/4 tsp freshly ground black pepper
Method
Season the chicken
Finely grate the zest of one lemon and squeeze it. Whisk the zest and 2 tbsp lemon juice with garlic, 1 tbsp olive oil, 1 tbsp za’atar, 3/4 tsp salt, and pepper; coat the chicken thighs and let them stand while you prepare the grain.
Look for: The chicken is evenly coated in a fragrant lemon-garlic paste.
Toast the almonds
Warm a dry saucepan over medium heat and toast the sliced almonds, stirring often, until golden and fragrant. Transfer them to a plate so they do not continue browning in the hot pan.
Look for: Almond edges are lightly golden and smell nutty, not scorched.
Cook the bulgur
Bring 1 1/2 cups stock and the remaining 1/2 tsp salt to a boil; stir in bulgur, cover, and simmer low about 12 minutes until absorbed and tender. For quinoa, simmer 1 cup rinsed quinoa in 2 cups stock, covered, about 15 minutes. For couscous, pour 1 1/4 cups boiling stock over 1 cup couscous, cover off heat 5 minutes, then fluff.
Look for: The chosen grain is tender and fluffy with no pool of stock remaining.
Sear the chicken
Heat the remaining 1 tbsp olive oil in a large skillet over medium-high. Add the chicken without crowding and sear 5 to 7 minutes per side, turning once, until the thickest thigh reaches 165 F; work in batches if needed.
Look for: Chicken is browned on both sides and the thickest piece registers 165 F.
Rest the chicken
Transfer the chicken to a clean cutting board and rest for 5 minutes so the juices settle. Slice across the grain and spoon any board juices back over the chicken.
Look for: The juices settle and slices stay moist rather than spilling liquid onto the board.
Finish the pilaf
Fluff the cooked bulgur with a fork, then fold in parsley, scallions, toasted almonds, 1 tbsp lemon juice, and the remaining 1 tbsp za’atar. If using quinoa or couscous instead, finish that chosen grain with the same parsley, scallions, almonds, lemon, and za’atar.
Look for: Herbs and almonds are distributed through the grain while the grains remain separate.
Make the fresh side
Toss the diced cucumber and tomatoes with the remaining lemon juice and a pinch of salt just before serving, keeping the vegetables crisp and lightly seasoned.
Look for: Cucumber and tomatoes are lightly glossy but not sitting in excess liquid.
Plate and serve
Spoon the warm bulgur pilaf onto plates, arrange sliced za’atar chicken over it, and serve the cucumber-tomato salad alongside. Scatter any remaining parsley and toasted almonds over the pilaf.
Look for: Each serving has a balanced portion of chicken, grain, and fresh vegetables.
