Ingredients
□ 4 tbsp unsalted butter
□ 1/4 cup all-purpose flour
□ 2 1/2 cups whole milk, divided
□ 1 tsp freshly ground black pepper
□ 3/4 tsp kosher salt, divided
Directions
1. Melt butter over medium-low. Whisk in flour and cook 2 minutes until pale and no longer raw-smelling.
2. Whisk in 1/2 cup milk gradually to make a smooth paste; add 1 3/4 cups, reserving 1/4 cup.
3. Gently simmer 3 to 5 minutes until pourable. Add 3/4 tsp pepper and 1/2 tsp salt; simmer 1 minute.
4. Adjust seasoning and thickness with reserved milk; whisk smooth or strain. Serve warm, with biscuits if desired.
Cook’s note: Keep the roux pale and whisk milk in gradually to prevent lumps.
