Vodka Sauce

50 min · 8 1/4-cup servings

Ingredients

□ 2 tbsp extra-virgin olive oil

□ 1 small yellow onion, finely diced

□ 1/2 tsp kosher salt, divided

□ 3 garlic cloves, finely minced

□ 1/4 tsp crushed red pepper flakes

□ 1/3 cup tomato paste

□ 1/4 cup vodka

□ 1 1/2 cups crushed tomatoes

□ 1/2 cup water

□ 1/2 cup heavy cream, gently warmed

□ 1/3 cup finely grated Parmesan cheese

□ 2 tbsp unsalted butter

□ 1/4 tsp freshly ground black pepper

Directions

1. Dice onion and mince garlic. Soften onion in olive oil with 1/4 tsp salt for 6–7 minutes.

2. Add garlic and pepper flakes for 30 seconds. Cook tomato paste 4–5 minutes until deep brick red.

3. Off heat add vodka, then reduce 2 minutes. Add tomatoes, water, and pepper; simmer gently 12 minutes.

4. Blend smooth. Over low heat whisk in warm cream, Parmesan, and butter without letting the sauce boil.

5. Add remaining salt to taste; serve warm once the smooth sauce coats a spoon.

Cook’s note: Keep the cream below a simmer to maintain a smooth, rosy sauce.
