Thai Basil Ground Turkey Lettuce Cups
30 min · 4 servings
Ingredients
□ 1 lb ground turkey
□ 1 tbsp neutral oil
□ 3 garlic cloves, finely minced
□ 2 shallots, thinly sliced
□ 1 fresh Thai bird chile, thinly sliced
□ 2 tbsp fish sauce
□ 1 tbsp low-sodium soy sauce
□ 2 tsp packed light brown sugar
□ 2 tbsp water
□ 1 cup jasmine rice
□ 1 1/2 cups water
□ 1 head butter lettuce, leaves separated
□ 1 English cucumber, thinly sliced
□ 1 packed cup Thai basil leaves, stems removed
□ 2 scallions, thinly sliced
□ 1 lime, cut into wedges
Directions
1. Rinse and cook jasmine rice. Dry the lettuce; slice cucumber, scallions, shallots, chile, and garlic.
2. Whisk fish sauce, soy, sugar, water, and lime. Brown turkey in shimmering oil until it reaches 165 F.
3. Stir-fry garlic, shallots, and chile until fragrant. Add sauce and reduce until it coats the turkey.
4. Fold in Thai basil off heat. Spoon into lettuce leaves and serve with cucumber, scallions, rice, and lime.
Cook’s note: Dry lettuce leaves hold the warm filling without turning limp.
