Spicy Black Bean Burgers with Extra-Crispy Homemade Fries

A savory, spicy black bean burger with onion in every bite meets its ideal sidekick: hand-cut fries that are double-fried until exceptionally crisp.

These burgers lean on thoroughly dried black beans, finely diced onion, and a small but assertive dose of chipotle pepper in adobo. The same cook session produces fries with a tender interior and an extra-crisp shell, so both parts of the plate arrive hot together.

Dry beans make a better batter

Rinsed canned beans carry more moisture than a burger mixture wants. Blotting them dry before mashing gives the panko a chance to bind the mixture, while leaving some beans whole keeps the patty from becoming a uniform paste.

Chipotle with a clear role

One minced chipotle pepper and a little of its adobo sauce bring smoky warmth without turning the burger wet or overly fiery. Finely diced onion is mixed directly into the black bean batter, where it softens as the patties cook and adds a savory backbone.

Onion, chipotle-adobo, and panko are mashed through the black beans before the patties are shaped.

The double-fry advantage

A large skillet with oil about 1/2 inch deep is enough for this method; a dedicated fryer is not required. For the first fry, a test potato should make gentle, steady bubbles, then after resting the fries, raise the heat until a test fry bubbles lively without smoking for the crisping pass. A thermometer gives useful targets of 325 F and 375 F, but the test-fry cues let a home cook manage the heat by lowering it if the oil smokes and waiting between batches for the bubbling to recover.

A focused panko crust

Pressing panko onto the flat sides gives the burgers a textured exterior while the uncovered edges remain compact and sturdy. Let the patties brown undisturbed before turning; forcing an early flip is the quickest route to a torn crust.

Keep the finish hot

Toast the buns in the burger skillet only after the patties are done, then carry everything to the table without a holding period. The contrast of a hot, crisp burger and freshly salted fries is central to the recipe, so it rewards prompt serving.

Spicy Black Bean Burgers with Extra-Crispy Homemade Fries

4 burgers with fries
85 minutes total

Ingredients

  • •  2 large russet potatoes (about 1 1/2 lb), scrubbed
  • •  2 cups neutral frying oil
  • •  1 1/2 tsp kosher salt, divided
  • •  2 (15 oz) cans black beans
  • •  1 small yellow onion
  • •  1 chipotle pepper in adobo
  • •  2 garlic cloves
  • •  1 tsp ground cumin
  • •  1 tsp smoked paprika
  • •  3/4 cup panko breadcrumbs, divided
  • •  4 burger buns

Method

  1. Rinse and cut the potatoes

Cut the potatoes lengthwise into 1/4-inch planks, then cut the planks into even 1/4-inch fries; rinse them under cold water until the water runs mostly clear.

Look for: The fries are similar in thickness and the rinse water is no longer cloudy with starch.

  2. Soak and dry the fries

Soak the cut fries in a bowl of cold water for 20 minutes, then drain and dry them very thoroughly with clean kitchen towels before they go near hot oil.

Look for: The fry surfaces feel dry rather than slick, with no visible water pooled in the bowl.

  3. Dry the beans

Spread the black beans on a towel-lined tray and blot them dry, then transfer them to a large bowl; removing surface moisture keeps the burger batter from becoming pasty.

Look for: The beans look matte and leave little moisture on the towel when pressed.

  4. Build the black bean batter

Add the onion, chipotle pepper and adobo, garlic, cumin, smoked paprika, 1/2 tsp salt, and 1/2 cup panko to the beans; mash until mostly combined with some whole beans still visible.

Look for: A squeezed handful holds together while distinct bean pieces give the mixture texture.

  5. Shape the burgers

Divide the mixture into four equal portions and press each into a 3/4-inch-thick patty, firmly compacting the edges; place the patties on a plate while the oil heats.

Look for: Each patty has tidy edges and stays intact when gently lifted from the plate.

  6. Blanch the fries

Pour the neutral frying oil 1/2 inch deep into a large skillet over medium heat; fry one test potato first, and when it makes gentle steady bubbles (about 325 F, if using a thermometer), cook the potatoes in two batches for 5 to 6 minutes each, then drain on a rack.

Look for: The test fry bubbles gently without smoking, and the finished fries bend easily and remain pale blond.

  7. Crisp the fries

Raise the skillet to medium-high and let the oil recover between batches; a test fry should bubble lively at once without smoking (about 375 F, if using a thermometer). Fry the blanched potatoes in two batches for 3 to 4 minutes each, then season immediately with 1/2 tsp salt.

Look for: The oil bubbles lively but does not smoke, and the fries are evenly golden, rigid when lifted, and crackle softly as they drain.

  8. Coat the patties

Spread the remaining 1/4 cup panko on a plate and gently press both flat sides of each patty into it, leaving the edges uncovered so the crumb coating stays put.

Look for: A thin, even layer of crumbs adheres to both faces without crumbling the patties.

  9. Pan-fry the burgers

Warm 2 tablespoons of the hot frying oil in a large skillet over medium heat and cook the patties for 4 to 5 minutes per side, until the panko is crisp and the centers are hot.

Look for: Both sides are deeply browned and the burgers release from the skillet without tearing.

  10. Toast and serve

Toast the buns cut side down in the warm skillet for about 1 minute, then set each burger on a bun and serve at once with the extra-crispy fries and remaining 1/2 tsp salt if needed.

Look for: The buns are warm with golden cut faces, and the fries are still crisp when served.
