Smoky Pork Burgers with Roasted Potato Wedges
A little chipotle deepens smoked paprika in juicy pork burgers, while crisp potato wedges and cool lime yogurt keep the plate balanced.

These burgers build smoke from paprika and just enough chipotle to add warmth without burying the pork. Crisp oven wedges and a chilled lime-yogurt dip bring contrasting textures and acidity, making the skillet meal feel complete in about 50 minutes.
Give the potatoes a head start
Evenly cut wedges roast while you mix and shape the patties, which keeps the total cooking time manageable. Starting them cut-side down encourages browning; turning halfway exposes a fresh surface to the hot sheet pan.
Season without compacting
The seasoning mix is intentionally direct: paprika brings smoke, garlic and pepper add savory depth, and a small amount of chipotle gives a restrained heat. Use your fingertips to fold it through the meat only until the color looks even, since overworking ground pork can make the cooked texture firm.

Shape with a light touch
Divide the meat evenly and form patties without pressing them into dense disks. A shallow dimple in each center helps the burgers keep a flatter shape as they cook.
Check the middle of each burger
Ground pork burgers need a thermometer check because browning alone does not show whether the center is cooked through. Measure each patty at its thickest point and continue cooking until it reaches 160 F for safe doneness.

Set cool dip beside the hot sides
Plain Greek yogurt, lime, honey, and cilantro make a quick dip that stays bright beside the smoky seasoning. Serve it chilled with the wedges and offer extra at the table for a cool counterpoint to the warm burgers.
Smoky Pork Burgers with Roasted Potato Wedges
Ingredients
- • 1 1/2 lb ground pork
- • 1 tsp smoked paprika
- • 1 tsp granulated garlic
- • 1/4 tsp chipotle powder
- • 1/2 tsp freshly ground black pepper
- • 1 1/4 tsp kosher salt, divided
- • 1 tbsp Worcestershire sauce
- • 2 lb russet potatoes
- • 2 tbsp olive oil
- • 1 tbsp neutral oil
- • 3/4 cup plain Greek yogurt
- • 1 lime
- • 1 tsp honey
- • 2 tbsp chopped fresh cilantro
- • 4 sesame burger buns
- • 4 lettuce leaves
Method
Heat the oven
Set a rack in the center and heat the oven to 425 F. Line a rimmed sheet pan with parchment for the potato wedges.
Look for: The oven is fully preheated before the potatoes go in.
Start the potato wedges
Scrub the potatoes and cut them lengthwise into evenly sized wedges. Toss with olive oil, 3/4 tsp salt, and half the smoked paprika, then spread cut-side down in a single layer and roast for 18 minutes.
Look for: The wedges have an even oil sheen and open space between pieces for browning.
Stir the cooling dip
Whisk Greek yogurt with 1 tbsp lime juice, honey, and cilantro until smooth. Refrigerate the tangy dip while the burgers cook so it stays cool against the smoky pork.
Look for: The dip is smooth and spoonable, with lime acidity balanced by the yogurt and a hint of honey.
Season the pork gently
Combine ground pork with Worcestershire, garlic, chipotle, the remaining smoked paprika, black pepper, and remaining 1/2 tsp salt. Mix with fingertips only until evenly seasoned; stop as soon as the mixture holds together.
Look for: Spices are distributed through the meat without a dense, paste-like texture.
Shape the patties
Divide the pork into four equal portions and lightly form patties about 3/4 inch thick, avoiding tight packing. Press a shallow dimple in the center of each and chill them briefly while the skillet heats.
Look for: Patties hold together but remain loose, with a shallow center indentation to limit doming.
Turn and finish the potatoes
Turn the wedges so a different cut face contacts the pan and roast 12 to 15 minutes more, until browned at the edges and tender when pierced. Keep them warm while you cook the burgers.
Look for: The centers are tender and the corners are crisp and deeply golden.
Sear the pork burgers
Heat neutral oil in a large skillet over medium-high heat until shimmering. Add patties without crowding and sear about 5 minutes per side, turning once; continue as needed until the center of each patty reaches 160 F on an instant-read thermometer.
Look for: The first side has a browned crust before turning, and every patty measures at least 160 F in the center.
Toast the buns
Transfer cooked patties to a clean plate and let them rest while you place the buns cut-side down in the skillet. Toast over medium heat until the cut faces are golden and crisp, about 1 minute.
Look for: The bun interiors are toasted and lightly crisp without drying through.
Build and serve
Set a lettuce leaf on each bun bottom, add a rested pork patty, and close with the bun top. Serve immediately with the crisp potato wedges and chilled lime-yogurt dip for dipping.
Look for: The burger is warm, the lettuce is crisp, and the dip remains cool beside the hot wedges.
