Cheesy Smash Burgers, Fries, and Sauce

55 min · 4 servings

Ingredients

□ 2 large russet potatoes, scrubbed

□ 6 cups neutral frying oil

□ 1 1/2 lb 80/20 ground beef

□ 1 1/2 tsp kosher salt

□ 1 tsp black pepper

□ 2 medium yellow onions, thinly sliced

□ 2 tbsp unsalted butter, divided

□ 8 slices American cheese

□ 4 split potato buns

□ 1/2 cup mayonnaise

□ 2 tbsp ketchup

□ 1 tsp Dijon mustard

□ 1 tbsp pickle brine

□ Dill pickle chips for serving

Directions

1. Cut potatoes into 1/4-inch batons and soak 10 minutes. Heat frying oil to 350 F.

2. Fry potatoes at 350 F for 5 minutes per batch. Cook salted onions in 1 tbsp butter until golden.

3. Fry potatoes again at 375 F until crisp; salt. Stir mayonnaise, ketchup, Dijon, and pickle brine into sauce.

4. Heat skillet high and divide beef into eight loose 3-oz balls. Smash, flip, cheese, and cook to 160 F.

5. Toast buns in remaining butter. Sauce buns, stack double patties and onions, then serve with fries and pickles.

Cook’s note: Smash only once, immediately after the beef hits the hot skillet, to preserve the browned crust.
