Slow-Cooker Cajun Red Beans and Rice
Andouille, Cajun aromatics, and red beans simmer to creamy tenderness; separate fluffy rice keeps its texture beneath the beans, finished with scallions and hot sauce.

This slow-cooker pot layers browned andouille with the onion, celery, and bell pepper base that gives Cajun cooking its familiar savory foundation. Canned kidney beans soften in seasoned broth while retaining enough shape to make a hearty topping for separately cooked rice.
Start with browned sausage
A quick skillet browning gives the andouille caramelized edges and leaves savory drippings for the vegetables. Softening the onion, celery, and bell pepper in that same skillet makes a more rounded base before the slow cooker takes over.
Let the beans turn creamy
Canned red kidney beans need only a gentle, measured cook to take on the broth and Cajun seasoning. Check their texture as they soften; mashing a small portion at the end thickens the liquid while most beans remain intact.

Keep rice on its own track
Rice cooks separately so it stays fluffy instead of absorbing the bean broth in the slow cooker. Rinsing first removes excess surface starch, and a covered rest lets the grains finish steaming before they are fluffed.
Balance the final bowl
Apple cider vinegar lifts the rich sausage and beans, while scallions bring a fresh, crisp finish. Taste before adding more heat, since Cajun seasoning and andouille can both contribute salt and spice; pass hot sauce at the table for individual adjustment.

Slow-Cooker Cajun Red Beans and Rice
Ingredients
- • 3 (15 oz) cans red kidney beans, drained and rinsed
- • 12 oz andouille sausage, sliced into coins
- • 1 tbsp neutral oil
- • 1 large yellow onion, diced
- • 2 celery ribs, diced
- • 1 green bell pepper, diced
- • 4 garlic cloves, minced
- • 2 cups low-sodium chicken broth
- • 1 1/2 tbsp Cajun seasoning
- • 1 tsp dried thyme
- • 1/2 tsp black pepper
- • 2 bay leaves
- • 1 tsp Worcestershire sauce
- • 1 tbsp apple cider vinegar
- • 1 tsp kosher salt, divided
- • 1 1/2 cups long-grain white rice
- • 2 1/4 cups water
- • 3 scallions, thinly sliced
- • 2 tbsp hot sauce, for serving
Method
Prepare the ingredients
Set out a 5- to 6-quart slow cooker. Drain and rinse the red kidney beans, slice the andouille sausage, and dice the onion, celery, and green bell pepper; mince the garlic.
Look for: The beans are rinsed and drained, and the aromatics are cut into even pieces.
Brown the andouille
Warm the neutral oil in a large skillet over medium-high heat. Add the andouille sausage in a single layer and brown for about 5 minutes, turning once so both sides color.
Look for: The sausage coins have browned edges and released some flavorful fat.
Soften the vegetables
Transfer the browned sausage to the slow cooker. Add the yellow onion, celery, and green bell pepper to the skillet and cook in the sausage drippings, stirring, until the onion turns translucent and the celery begins to soften.
Look for: The onion is translucent at the edges and the peppers smell sweet rather than raw.
Bloom the seasonings
Stir the minced garlic, Cajun seasoning, dried thyme, black pepper, and half of the kosher salt into the skillet. Cook briefly, just until fragrant, then scrape the vegetables and spices into the slow cooker.
Look for: The garlic smells aromatic without browning, and the spices coat the vegetables.
Slow-cook the beans
Add the red kidney beans, chicken broth, Worcestershire sauce, and bay leaves to the slow cooker; stir to combine. Cover and cook on LOW for 3 hours, then check: continue for up to 1 additional hour until the broth is creamy and the beans are tender but mostly intact.
Look for: The beans yield easily when pressed, and the cooking liquid looks thickened and creamy.
Finish the bean pot
Remove and discard the bay leaves. Mash about 3/4 cup of beans against the side of the slow cooker and stir them back in to thicken the pot; stir in the apple cider vinegar and the remaining kosher salt.
Look for: The mashed beans disappear into the broth, which clings lightly to the sausage and vegetables.
Cook the rice separately
Rinse the long-grain white rice in a fine-mesh strainer until the runoff is nearly clear. Combine the rice and water in a saucepan, bring to a boil, cover, and simmer on low until tender; remove from the heat and let it stand covered until fluffy.
Look for: The rice is tender with no water remaining, and the grains separate when fluffed.
Taste and prepare the garnish
Taste the red beans and adjust the seasoning with a little more Cajun seasoning or hot sauce if desired. Thinly slice the scallions while the rice rests, keeping the grains separate until serving.
Look for: The pot tastes savory and gently tangy, with the scallions ready for a fresh finish.
Serve over rice
Fluff the rice with a fork and spoon it into warm bowls. Ladle the creamy red beans, vegetables, and andouille over the rice, then finish each serving with scallions and hot sauce to taste.
Look for: Each bowl has fluffy rice beneath the creamy beans and a bright scatter of scallions.
