Silky Tahini Hummus
Canned chickpeas become exceptionally creamy hummus when tahini is emulsified first and ice water is whipped in at the end.

Classic hummus is more about texture and balance than extra add-ins. This vegan version keeps the familiar tahini, lemon, garlic, and cumin profile clear and focused.
A food processor does the important work here. Give each stage enough time, especially after the ice water goes in, and the puree turns pale, soft, and silky.
Start with an emulsified base
Processing tahini with lemon juice before the chickpeas creates a thick, pale foundation. Garlic, cumin, and salt disperse evenly there, so each bite tastes balanced rather than sharply seasoned in spots.
Rinse for a clean puree
Canned chickpeas need a thorough rinse to remove their canning liquid. Rubbing away loose skins is optional but useful when you want the smoothest possible finish from pantry chickpeas.

Use ice water for lift
Ice water helps the tahini and chickpeas whip into a lighter texture rather than a dense paste. If the hummus still feels grainy, keep the processor running and scrape the bowl once before adding more water.
Serve with a wide swirl
A shallow bowl gives the hummus room for a broad spoon swirl that catches the olive oil. Warm pita and crisp raw vegetables add contrast without covering the clean classic flavor.

Silky Tahini Hummus
Ingredients
- • 2 (15 oz) cans chickpeas, drained and rinsed
- • 1/2 cup tahini
- • 1/4 cup fresh lemon juice
- • 2 garlic cloves, minced
- • 1 tsp ground cumin
- • 1 tsp kosher salt
- • 1/4 cup ice water
- • 2 tbsp extra-virgin olive oil
- • Warm pita bread and raw vegetables, for serving
Method
Rinse the chickpeas
Drain and rinse the canned chickpeas thoroughly, rubbing them briefly between your hands to loosen any loose skins for a smoother puree.
Look for: The chickpeas smell clean and the rinse water runs clear.
Blend the tahini base
In a food processor, process the tahini, lemon juice, minced garlic, cumin, and salt until thick, pale, and glossy.
Look for: The tahini mixture lightens in color and clings smoothly to the processor bowl.
Add the chickpeas
Add the rinsed chickpeas and process, scraping down the bowl once, until no whole chickpeas remain and the mixture looks evenly ground.
Look for: The puree is uniform with no visible whole chickpeas around the blade.
Whip until silky
With the processor running, drizzle in the ice water and process until the hummus is pale, airy, and silky enough to swoop with a spoon.
Look for: A spoon makes a smooth curl in the hummus without catching on grainy bits.
Balance the flavor
Taste the hummus and adjust with another pinch of salt or a little lemon juice as needed, then process briefly to combine.
Look for: The tahini tastes nutty, the lemon tastes bright, and the salt makes both flavors clear.
Finish and serve
Spoon the hummus into a shallow bowl, make a broad swirl, drizzle with olive oil, and serve with warm pita and raw vegetables.
Look for: The olive oil settles into the swirl and the hummus holds a soft, glossy ridge.
