Juicy Pork Burgers with Charred Corn and Green Beans
Sage-scented pork burgers cook alongside charred corn and green beans, then meet a quick homemade mustard sauce on toasted buns.

These burgers are built for a grill or skillet and keep the side dishes simple: corn gets charred, while green beans stay crisp-tender. A short rest and a thermometer check make the pork both juicy and safely cooked.
The tangy sauce is stirred together while the patties are formed, so it is ready when the buns come off the heat.
Keep the pork mixture loose
Ground pork benefits from a light touch. Breadcrumbs and egg help the patties hold together, while gentle mixing keeps the texture tender instead of compact.
Make a balanced tangy sauce
Mayonnaise gives the condiment body, Dijon adds sharpness, and cider vinegar brings a clean tang. A small amount of honey rounds the edges without making the sauce sweet.

Use the heat for the sides
Corn can tolerate direct heat long enough to pick up scattered char, while green beans need frequent turning to stay crisp-tender. Cook them in sequence and move each to a board as soon as it is ready.
Check the center, not the color
Burgers can brown before the center is cooked through, so use an instant-read thermometer inserted sideways into the thickest part. Remove them when the center reaches 160 F and rest briefly; pressing on the patties only pushes out flavorful juices.

Assemble just before eating
Toasting the buns creates a light barrier for the sauce and burger juices. Assemble at the last moment, then serve the hot vegetables alongside rather than beneath the patties.
Juicy Pork Burgers with Charred Corn and Green Beans
Ingredients
- • 1 1/2 lb ground pork
- • 1/3 cup plain dry breadcrumbs
- • 1 large egg
- • 2 garlic cloves, finely grated
- • 1 tbsp finely chopped fresh sage
- • 1 tsp kosher salt
- • 1/2 tsp freshly ground black pepper
- • 1/2 cup mayonnaise
- • 1 tbsp Dijon mustard
- • 1 tbsp apple cider vinegar
- • 1 tsp honey
- • 4 ears fresh corn, husked
- • 12 oz green beans, trimmed
- • 1 tbsp neutral oil
- • 4 burger buns, split
- • 1 tbsp unsalted butter, softened
Method
Make the tangy sauce
Whisk the mayonnaise, Dijon mustard, apple cider vinegar, and honey in a small bowl until smooth; taste for a bright sweet-tart balance, cover, and refrigerate while preparing the meal.
Look for: The sauce is creamy and tangy, with no streaks of vinegar or honey.
Mix the pork gently
In a large bowl combine the ground pork, breadcrumbs, egg, garlic, sage, kosher salt, and black pepper; use your fingers to mix only until the crumbs disappear so the patties stay tender.
Look for: The mixture holds together when pressed but still feels soft rather than dense.
Shape the patties
Divide the pork mixture into four equal portions and shape into patties slightly wider than the buns, pressing a shallow dimple into each center to limit doming as they cook.
Look for: Each patty has an even thickness and a shallow center depression.
Heat the cooking surface
Heat a grill to medium-high or set a large skillet over medium-high heat; when the grate or skillet is hot, brush it lightly with neutral oil to help the pork brown without sticking.
Look for: The oiled surface shimmers lightly and a test drop of water sizzles on contact.
Char the corn
Grill the husked corn, turning every few minutes, or char it in the skillet in batches until kernels are blistered in spots and tender; move the ears to a board as they finish.
Look for: Kernels show scattered brown char and yield when pressed with a knife tip.
Cook the green beans
Add the trimmed green beans to the skillet or a grill basket with a little neutral oil and cook, tossing or turning often, until bright green with browned spots and crisp-tender; transfer to the board beside the corn.
Look for: The beans have a few browned blisters but still snap when bent.
Cook the pork patties
Place the pork patties on the grill or in the skillet and cook without pressing them, turning once when browned; continue until the centers reach 160 F on an instant-read thermometer, inserting it from the side into the center of a patty.
Look for: Both sides are browned and the thickest patty registers 160 F at its center.
Toast the buns
While the patties finish, spread the cut sides of the burger buns with softened butter and toast them cut-side down on the cooler part of the grill or in a clean skillet until golden at the edges.
Look for: The bun faces are lightly crisp and golden but the tops remain soft.
Rest and cut the vegetables
Transfer the cooked pork patties to a clean plate and rest for 5 minutes; meanwhile cut the corn from the cobs and keep the green beans warm, uncovered, so their crisp surface does not steam soft.
Look for: The patties rest undisturbed and the vegetables remain warm with little trapped moisture.
Assemble and serve
Spread the tangy mayonnaise sauce on the toasted buns, add a pork patty, and close the burgers; serve with charred corn and green beans alongside, passing any remaining sauce at the table.
Look for: The toasted buns hold the juicy patties without becoming soggy, with vegetables served hot beside them.
