Persian Herb Rice with Saffron Potato Tahdig
Fragrant green herb rice steams over a crisp saffron-stained potato crust, with roasted carrots and bright cucumber salad alongside.

Ingredients
3 cups basmati rice
2 tbsp kosher salt, divided
1/2 cup extra-virgin olive oil, divided
1/2 tsp saffron threads, crushed
1 tsp ground turmeric
1 large russet potato, peeled and sliced 1/8 inch thick
1 1/2 cups chopped dill, parsley, cilantro, and scallions
1 lb carrots
1 English cucumber
1 lemon
Equipment
Large pot · Fine colander · Wide nonstick pot with lid · Clean kitchen towel · Sheet pan · Thin spatula
Rinse and parboil
01. Rinse and soak the rice until its water runs nearly clear and the grains lengthen.
02. Bloom crushed saffron in hot water until richly amber.
03. Boil drained rice only until tender outside with a firm center, the texture that will finish during steaming.
Season and layer
04. Rinse the parboiled rice briefly, then fold in herbs and turmeric without breaking the grains.
05. Sizzle overlapping potato slices in olive oil and stain them with saffron water.
06. Mound the rice loosely, make steam vents, and drizzle with the remaining saffron water and olive oil.
Steam and roast
07. Cover with a towel-wrapped lid and steam gently until the rice is separate and the potato base smells toasted.
08. Roast the oiled, salted carrots until their edges caramelize and a knife slides in easily.
Dress and turn out
09. Toss cucumber with lemon, salt, and oil, then let the dressing become lightly juicy while the rice rests.
10. Loosen the pot edges before a confident inversion; the intact golden potato layer is the signal to serve immediately.
