Oatmeal Raisin Cookies
62 min · 24 cookies
Ingredients
□ 1 cup raisins
□ 1 cup unsalted butter, softened
□ 1 cup packed light brown sugar
□ 1/2 cup granulated sugar
□ 2 large eggs, at room temperature
□ 2 tsp vanilla extract
□ 2 cups all-purpose flour
□ 1 tsp baking soda
□ 1 tsp ground cinnamon
□ 1/2 tsp fine salt
□ 3 cups old-fashioned rolled oats
Directions
1. If raisins are dry, soak briefly and pat dry. Heat oven to 350 F and line baking sheets with parchment.
2. Whisk flour, soda, cinnamon, and salt. Cream softened butter with both sugars until creamy.
3. Beat in eggs and vanilla. Mix in dry ingredients, then fold in oats and raisins just until combined.
4. Cover and chill dough for 30 minutes, until firm enough to portion neatly.
5. Scoop and bake at 350 F for 11 to 13 minutes, until edges are golden and centers look soft. Set on the pan for 5 minutes, then cool on a rack.
Cook’s note: Take the cookies out while the centers still look soft; the hot sheet finishes setting them.
