Mediterranean Eggplant, Chickpea, and Orzo Bake

Roasted eggplant and chickpeas turn a tomato-rich orzo bake into a vegetarian supper with a creamy center and bright finish.
Tomato orzo with browned eggplant and chickpeas is topped with softened feta, parsley, and lemon.

This casserole brings its components together in stages: eggplant roasts until sweet and browned, while orzo simmers briefly in tomato and broth. A covered bake lets the pasta finish in the same dish, with feta, lemon, and parsley added at the end.

Brown the eggplant first

Roasting the eggplant separately drives off surface moisture and gives the cubes browned edges before they enter the casserole. Turning once and leaving space between pieces helps them color instead of steam.

Let the pasta finish in the dish

The tomato base is loosened with vegetable broth so the orzo can absorb flavor as it bakes. A covered dish traps steam; stirring once and tasting the center keeps the pasta tender without letting the edges turn dry.

Finish with contrast

Feta softens over the bubbling casserole, adding salty richness without covering the vegetables. Lemon juice and parsley go in after the rest, keeping the final spoonful bright.

Check the center before serving

Orzo can absorb liquid at different rates depending on the dish and simmer. If the center is still firm after the first bake and the sauce is gone, stir in hot water and continue covered until tender.

Mediterranean Eggplant, Chickpea, and Orzo Bake

6 servings
80 minutes total

Ingredients

  • •  2 medium globe eggplants (about 2 lb total), cut into 3/4-inch cubes
  • •  3 tbsp extra-virgin olive oil, divided
  • •  1 1/2 tsp kosher salt, divided
  • •  1/2 tsp freshly ground black pepper
  • •  1 medium yellow onion, finely diced
  • •  4 garlic cloves, minced
  • •  2 tbsp tomato paste
  • •  1 tsp dried oregano
  • •  1 can (15 oz) crushed tomatoes
  • •  2 1/4 cups low-sodium vegetable broth
  • •  12 oz dry orzo
  • •  1 can (15 oz) chickpeas, drained and rinsed
  • •  1/2 cup hot water, only if the orzo absorbs the broth before it is tender
  • •  5 oz feta, crumbled
  • •  1 lemon, zested and juiced
  • •  1/3 cup chopped fresh flat-leaf parsley

Method

  1. Heat oven and season eggplant

Heat the oven to 425 F. Toss eggplant on a rimmed sheet pan with 2 tbsp olive oil, 1 tsp salt, and black pepper; spread in one uncrowded layer.

Look for: Eggplant has a light, even sheen of oil. Pieces have space between them so the edges can brown.

  2. Roast the eggplant

Roast for 25 to 30 minutes, turning once halfway, until browned at the edges and soft inside. Reduce the oven to 375 F when removing the pan.

Look for: Several sides of the cubes are browned. A fork slides into the center without resistance.

  3. Build the tomato base

While the eggplant roasts, heat the remaining 1 tbsp oil in a Dutch oven over medium. Soften the onion with the remaining 1/2 tsp salt, stir in garlic and oregano for 30 seconds, then cook the tomato paste 1 minute until brick red.

Look for: Onion is translucent and softened. Tomato paste darkens slightly and leaves a film on the pot.

  4. Simmer orzo and chickpeas

Stir in crushed tomatoes, vegetable broth, dry orzo, and chickpeas. Bring to a gentle simmer, stirring often, until the orzo is dispersed through a loose sauce; remove from the heat.

Look for: Small bubbles rise at the edges without a hard boil. Orzo is dispersed instead of clumped.

  5. Combine and cover

Fold roasted eggplant into the orzo mixture and transfer to a 9-by-13-inch baking dish. Cover tightly with foil and bake at 375 F for 18 minutes so the pasta finishes in the broth.

Look for: Eggplant is distributed without being mashed. Foil is sealed around the dish to hold steam.

  6. Check the orzo

Carefully uncover and stir from the edges toward the center. If the liquid is absorbed but the orzo is firm, stir in up to 1/2 cup hot water, cover, and bake 5 to 8 minutes until tender but still saucy.

Look for: Center orzo is tender with a slight bite, not chalky. A spoon leaves a creamy trail instead of a dry trench.

  7. Top with feta

Scatter feta evenly over the casserole. Bake uncovered for 5 to 7 minutes, until the edges bubble and the feta softens without drying the orzo.

Look for: Casserole bubbles gently along the sides. Feta is warm and softened with a few golden spots.

  8. Brighten and serve

Rest the casserole 5 minutes. Stir in lemon zest and juice and most of the parsley, taste for seasoning, then scatter the remaining parsley on top and serve warm.

Look for: Lemon lifts the tomato aroma without tasting sharply sour. Orzo remains creamy after its short rest.
