Mango Chutney
Firm mango cubes simmer in a ginger, mustard seed, vinegar, and sugar syrup until tender but distinct, then cool to a glossy chutney balanced for sweetness, acidity, and chile heat.

Ingredients
2 lb ripe-but-firm mangoes, peeled and cut into 1/2-inch cubes
3/4 cup granulated sugar
1/2 cup apple cider vinegar
1 tbsp finely grated fresh ginger
1 tsp brown mustard seeds
1/4 tsp red pepper flakes
1/2 tsp fine salt
1/4 tsp ground turmeric
Equipment
Medium heavy saucepan · Wooden spoon · Fine grater · Clean serving bowl
Prepare the fruit and spices
01. Peel and cut 2 lb mangoes into even 1/2-inch cubes so the pieces cook at a similar pace and keep their shape.
02. Grate the ginger and measure mustard seeds, red pepper flakes, salt, and turmeric before heating the pan.
Build the spiced syrup
03. Toast mustard seeds over medium heat until they begin to pop, then stir in ginger and spices for 30 seconds until fragrant.
04. Add vinegar, sugar, and salt; stir over medium heat until clear and gently boiling, with no sugar crystals on the pan bottom.
Cook to a gloss
05. Fold in mango and simmer uncovered for 18 to 22 minutes, stirring gently so cubes soften without breaking apart.
06. Reduce 3 to 5 minutes more until syrup clings and a spoon track closes slowly; stop before the hot chutney looks fully thick.
Cool before tasting
07. Cool for 45 minutes before judging the balance; sweetness becomes more apparent and the syrup thickens as it cools.
08. Serve at room temperature or chill in a covered container; curry or cheese are optional pairings.
