Kansas City BBQ Sauce
45 min · 2 cups
Ingredients
□ 1 1/2 cups ketchup
□ 1/4 cup molasses
□ 1/4 cup packed light brown sugar, divided
□ 1/4 cup apple cider vinegar, divided
□ 2 tbsp Worcestershire sauce
□ 1 tsp yellow mustard powder
□ 1 tsp smoked paprika
□ 1/2 tsp garlic powder
□ 1/2 tsp onion powder
□ 1/4 tsp ground black pepper
□ 1/8 tsp cayenne pepper
□ 1/3 cup water, plus more as needed
Directions
1. Measure ingredients, reserving 1 tbsp each brown sugar and vinegar. Whisk ketchup, vinegar, Worcestershire, water, and spices smooth.
2. Whisk in molasses and most brown sugar. Stir over medium-low until small edge bubbles form; avoid a full boil.
3. Simmer low, stirring and scraping every 2 to 3 minutes, until glossy. Off heat, taste and adjust with reserved vinegar or sugar.
4. Thin with water or simmer briefly to set thickness. Cool 10 minutes; brush onto grilled foods or serve at the table.
Cook’s note: Keep the simmer gentle and scrape the pan often to protect the sugars from scorching.
