Honeyed Chokecherry Wóžapi
A gently simmered, softly thickened berry pudding framed as a home adaptation of a Lakota food tradition, with fresh chokecherries or an accessible frozen-berry option.

Ingredients
2 cups water
1 tbsp cornstarch
2 tbsp cold water
1/8 tsp fine salt
Equipment
Medium saucepan · Fine-mesh strainer · Heatproof bowl · Small cup · Whisk · Wooden spoon
Sort and simmer
01. Rinse 2 lb fresh whole chokecherries; if unavailable, use 2 lb frozen tart local berries straight from frozen.
02. Add 2 cups water and 1/8 tsp salt, bring just to a simmer, then cook gently for 18 minutes until the skins begin to split.
Strain and sweeten
03. Let the cooked fruit drain through a fine strainer; do not crush or press fresh chokecherry pits through the mesh.
04. Return pulp and juice to the saucepan and stir in 3 tbsp honey, or replace it with 3 tbsp maple syrup; keep the tartness clear.
Thicken softly
05. Whisk 1 tbsp cornstarch with 2 tbsp cold water until smooth, with no dry pockets.
06. Stir the slurry into the warm fruit and simmer gently for 2 minutes, until glossy and soft-pudding thick.
Rest and serve
07. Rest off the heat for 5 minutes; serve warm or chill until cool and spoonable, with bread, corn cakes, or game.
